Daniel went with a veggie diet because the meat and wine in Nebuchadnezzar's palace were being dedicated to idols. You can eat all the veggies you like, but if they are from ungodly sources that do unethical practices for the worship of money, it won't be blessed.
I think the best thing we can do is take more control of our food supply. Grow gardens as much as possible, hunt for our own food, support local small farmers.

The Bible tells us the three most righteous men were Job, Daniel, and Noah (Ezekiel 14:14). Righteous means right living, and interestingly all three are mentioned in regards to diet.
Job enjoyed a good carnivorous diet.
Job 1
1 There was a man in the land of Uz, whose name was Job; and that man was perfect and upright, and one that feared God, and eschewed evil.
2 And there were born unto him seven sons and three daughters.
3 His substance also was seven thousand sheep, and three thousand camels, and five hundred yoke of oxen, and five hundred she asses, and a very great household; so that this man was the greatest of all the men of the east.
4 And his sons went and feasted in their houses, every one his day; and sent and called for their three sisters to eat and to drink with them.
Daniel of course is famous for his 21 day water and vegetarian flush, and Noah was a practitioner of fermentation, (Genesis 9).

Ezekiel 14 12 The word of the Lord came to me: 13 Mortal, when a land sins against me by acting faithlessly, and I stretch out my hand against it, and break its staff of bread and send famine upon it, and cut off from it human beings and animals, 14 even if Noah, Daniel,[a] and Job, these three, were in it, they would save only their own lives by their righteousness, says the Lord God. 15 If I send wild animals through the land to ravage it, so that it is made desolate, and no one may pass through because of the animals; 16 even if these three men were in it, as I live, says the Lord God, they would save neither sons nor daughters; they alone would be saved, but the land would be desolate.
