Why are there righteous hungry people considering the Bible says...
Psalm 37:25
I have been young, and now am old;
Yet I have not seen the righteous forsaken,
Nor his descendants begging bread
The qualifier for this is "the righteous".
So I think the Psalmist is speaking within the context of the covenant curses and blessings.
National blessings if they are righteous.
National cursing if they are unrighteous.
Lev 26:5
you shall eat your bread to the full, and dwell in your land safely.
Since being a righteous nation means they won't have any lack, he obviously had never
seen the righteous begging bread.
All of this is tied to the law.
But we know the law is just a shadow of the things to come, and the reality is found in Jesus.

Colossians 2:17
We know that Jesus is our true bread. The fullness/reality of
Yet I have not seen the righteous forsaken,

Is found in Jesus.
John 6
33 For the bread of God is He who comes down from heaven and gives life to the world.”
34 Then they said to Him, “Lord, give us this bread always.”
35 And Jesus said to them, “I am the bread of life. He who comes to Me shall never hunger, and he who believes in Me shall never thirst.
Even one of the most submitted to God and righteous people said
1 Cor 4:11
11 To the present hour we both hunger and thirst, and we are poorly clothed, and beaten, and homeless.
The fullness of the things in the law are found in Jesus. The righteous are never hungry, because in Jesus they are righteous, and they always have access to the true bread of life.
