In Revelation we are told about 144,000 people. This concerns a physical, living group of people. They will be of the bloodline of their respective Israelite tribes. For when they shall say, Peace and safety; then sudden destruction cometh upon them, as travail upon a woman with child; and they shall not escape. But ye, brethren, are not in darkness, that that day should overtake you as a thief. Ye ...

Why and when did God establish dietary laws/ordinances?

When were they first defined? We don’t really know. The first reference to clean beasts are given to us in Genesis when Noah was gathering for the ark.

Gen. 7:2: Of every clean beast thou shalt take to thee by sevens, the male and his female: and of beasts that are not clean by two, the male and his female.

I am going to assume it was with Adam in the Garden of Eden. Why? Well, we will have to ask ...
