Don't worry too much about it. Very few people like my kind of chocolate. 85% cocoa, even Moser Roth's very smooth 85% cocoa, is much too strong for most people. Some even act like they want to vomit when they try it. Dunno why, I think it's good.

I don't like dark chocolate. Too bitter. Milk chocolate is the only true chocolate. Dark chocolate is really just unsweetened cocoa.

You know... it's interesting you should put it that way, because in Japan they have this stereotype involving chocolate. Men stereotypically like dark chocolate while women like milk chocolate. This goes to the extent that pocky (biscuit stick snack) dipped in dark chocolate is marketed as "men's pocky."

So dark chocolate is king, milk chocolate would be the queen. And of course dark chocolate has the caffeine punch that milk chocolate lacks, so we can say the king has the real power while the queen is just there to look pretty.

Dark chocolate isn't chocolate. It's just cocoa with a minimal amount of stuff added to tone down the extreme bitterness of pure cocoa. They should just call it cocoalate.

My mom makes a lovely hot chocolate:

You boil the cacao ball in water with a few cinnamon sticks until it dissolves - it looks like this:



Strain the liquid and put it back on the heat and add evaporated milk, sugar, vanilla, anise, and a little nutmeg, and grated lime
bring to a boil and let simmer for 20 or so minutes


it is SO comforting, and it tastes x1000 times better when my mom makes it
