I have used coconut flour, oat flour and flaxseed flour. But the recipes call for a ton of eggs (well, 6+ in truth) and requires no yeast. The texture is similar to zucchini or banana bread rather than sandwich bread and it doesn't rise much so is a small loaf. Anybody have a true gluten free sandwich bread recipe that's not too heavy?

hey, Violet. :)

two of our daughters have a gluten intolerance, and i have tried and tried!

honestly, they buy Udi's for something quick,
and the best breads (in their opinions) we've made so far have been from mixes.

Pamela's and King Arthur's are their favorites, but when i make the Pamela's i use melted
butter rather than oil...hope you aren't having a dairy problem, too!

some of the mixes use too much bean flour (again, their opinions)
and you can really taste it.

g/f has been somewhat of a horror to me...lol.

many blessings,
ellie
