(I "winged it", it still was awesome.)
Ingredients:
1/4 cup EVOO (extra virgin olive oil)
1 Tablespoon minced garlic
1-2 Tablespoons sunflower seed and pumpkin seed kernels (no shells...um...do I really need to say that?)
1 lb raw shrimp, no shell or tail, cut it off.
1 lb Arugula (or fresh Spinach if you can't find Arugula)
2 Tablespoons white sugar
2-3 cups diced watermelon

You can certainly add or adjust the ingredients to your taste. (Add black pepper, etc...)

Prep/cooking:
- Heat the olive oil over high heat in a medium size saucepan till tiny bubbles appear
- Add the minced garlic (more or less to your taste...I like a lot of garlic)
- Cook for another 1-2 minutes
- Add shrimp, cook for a couple of minutes until shrimp is done. (Don't overcook the shrimp. Nothing is worse than overcooked shrimp. If unsure, simply under cook the shrimp and go to step 5)
- Turn off heat and add the sunflower kernels and the pumpkin kernels, stir
- Remove from heat after 1-2 minutes
- Cut shrimp into smaller pieces, if desired
- After the above cools a bit, toss all of it with the Arugula, white sugar and the diced watermelon.
- Enjoy.
