My problem is I'm used to making things that you have to serve immediately. But things like steak, grilled cheese, and such are not scoopable or meant for big crowds. I need things that don't overcook when you have to leave them unattended for a couple hours. Any suggestions?

I make ambrosia at work all the time! and it's really yummy :p
Ambrosia
Coolwhip
Canned: Pineapple, moschino cherry, mandarin oranges
Minature marshmallows

And then for a cobbler what you can do is just basically take any fruit you want, spray the bottom of the pan, put the fruit at the bottom of the pan in some sort of fruit juice that tastes good with it and then when it's done put granola on top of it when it is done in the oven. it takes only about 20-30 minutes to cook and it's really easy!

In terms of like a meat, maybe some sort of meat in the crockpot like pulled pork or fajita mix with bell peppers, and then just bring tortillas or buns to put everything in. mostacoli, Italian beef, are other big ones too.
