Tuna Cakes
Ingredients:
3 tablespoons melted butter (grass-fed)
280 grams tuna flakes in brine, drained
1 big red onion, minced
2 tbsps cilantro, minced
1 1/3 cup baked or boiled sweet potato, mashed
finely grated zest of 1/2 medium-sized lemon
1 green bell pepper, minced
2 large eggs
salt and pepper
coconut oil for frying
Directions:
1. Grab a big mixing bowl and mix all ingredients (except the coconut oil) together.
2. Heat the coconut oil in the frying pan. When hot enough, place 2 or 3 egg rings and fill each with the tuna cake mixture. Cook each side for 5-7 minutes, or until golden brown.
3. Plate the cooked tuna cakes and drizzle with some lemon juice. Serve hot.
Notes
1. You can make this spicy by adding red pepper flakes into the mixture before frying.
2. This recipe can be Paleo if you use grass-fed butter.
