Tortellini Soup

INGREDIENTS

italian sausage
leeks, chopped
garlic, minced
rainbow chard (1-2 cups)
beef broth (i use low sodium)
2 tomatoes, diced
tomato sauce (about 8 oz)
red wine, about half a cup
mushrooms (i used a presliced oyster and shiitake blend from my local produce section)
cayenne pepper - around 1 tsp
onion powder - around 1 tsp
hot sauce
tortellini (i use and prefer ricotta filled)

INSTRUCTIONS

brown sausage
add in minced garlic and leeks. stir (don't let garlic burn)
incorporate chard and mushrooms, stirring occasionally

add in beef stock, red wine, diced tomatoes and tomato sauce
bring everything to a simmer
add in onion powder, cayenne pepper, and a few dashes of hot sauce to taste
add tortellini

allow everything to simmer for 5-10 minutes

garnish each serving with fresh chopped oregano and grated parmesan
