Collard Greens

Ingredients

bacon, cut into small pieces
leeks
garlic clove, minced
balsamic vinegar - about a quarter cup
water
collard greens

Instructions

clean and cut the collard leaves - i cut out the stems and rinse the leaves. Next, on a cutting mat, i lay a few leaves at a time on top of each other,roll them up, and cut them up so they look 'shredded'

in your pot, cook the bacon (no need to add any oil)
add leeks and minced garlic, saute
add in balsamic vinegar, bring the mixture to a simmer

add in collard greens, and about 2 cups of water

cover your pot and turn the stove down to low heat
allow to cook for about an hour, stirring every 20 minutes or so.

add salt to taste.

that looks very tasty Hellooo! I know in my Italian-Portuguese Culture, we use lots of collard greens and sautee them in olive oil and garlic as you mentioned in your recipe I love it! :)

Italian and Portuguese! I would love to know some of the recipes you grew up with, I'll bet you experienced some wonderful cooking in your family.

good recipe, Hellooo,

my husband and I love all kinds of greens and are growing some now,
and they will last well into the new year.

I would like to try the 'leeks' but not the 'pork', we sometimes use 'smoked-turkey'
to add flavor plus lots of onions and garlic and chicken or beef broth.
