My boyfriend is a [picky] vegetarian, and sometimes I like to cook for him. I'm running out of ideas other than veggie fajitas, pasta/marinara/lasagna, and mac & cheese. He will eat shellfish, but that gets expensive. Does anyone have any good recipes for vegetarian dishes that don't include any kind of veggie burger or tofu?

I have one. I had it once when I went to a vegetarian friend's house. It's simple, quick and easy to prepare in less than 30 seconds.
You will need 1 Tomato, and 1 avacodo. Method: Put the tomato on plate. Put the avacado on a plate. Add salt and enjoy. |

SPECIAL "K" LOAF
4 c. Special K cereal 1 can mushroom soup 1/2 c. finely chopped celery 1 1/2 c. cottage cheese 1 c. chopped nuts 1 c. minced onion 3 beaten eggs 1/2 c. grated cheese 1 1/2 tbsp. sage Mix all ingredients together thoroughly. Pour a little oil in loaf pan, pour mixture in pan. Bake at 350 degrees for 45 minutes or until firm |

I know! Lol don't worry, I'm pretty sure he hasn't grown up 'cause he's been an only child all his life and is used to being catered to. I think what also has contributed to it is that his mom never cooked... and if she did cook, it wasn't good. He never liked meat, though, even as a kid he just didn't want to eat it. I try not telling him, but I can't lie when he asks! He's 20, he'll figure it out haha

You can make him soup. Making veggie soup is really easy, since you don't need a recipe. Every time I make veggie soup it's different.
Last time, mom and I used tomato paste, tomato chunks, celery, sauted onions, potatos, carrots, bay leaves, barley, and I think that was it. The thing is, when you use carrots in soup, you either have to cook them last, or cook them seperately and add them last because carrots have a very strong flavor. If you cook them first, and add all the ingredients in with them right away, your whole soup will taste like carrots. *** You can make campbell's tomato soup. *** Eggplant parmesian, which i don't have a recipe for, but I'm sure you can find one online *** potato soup, which I have a recipe for, but the recipe I have has chicken in it *** broccoli and cheese soup. yum. Mom has a recipe for that one, but I'm not sure where it is. *** rice and beans. If your boyfriend is picky, tell him to grow up and get over it. If he is going to make you cook for him, he should eat and be thankful or make his own food. |

Thanks for the suggestions! Searching4somethinglost, I don't see how someone COULDN'T like curry!
And lil-rush, he does like soups, but he feels they're not substantial enough or don't fill him up enough. He complains that soups or salads just seem like side dishes to be accompanied by something heartier. I guess as long as there is some sort of starch he is happy? Considering he finds pizza or pasta dishes to be plenty. I wish I could teach him not to be so picky! It'd make life SO much easier! |
