Take a couple of chicken breasts and dredge them in thyme, pepper and salt (easy on the salt -- it is NOT a dieter's friend). Pan fry them in a tablespoon of olive oil. Remove the breasts, add 3 tablespoons each of balsamic vinegar and honey to the pan and cook until reduced slightly. Add the breasts back in to coat them with the sauce. Serve with rice and (I like) steamed snow peas. Yum...

My hubby loves this and didn't even realize at first that it was extremely low fat. Has tons of flavor.

Ooooooh also, if you make yogurt, if you strain the whey off, it's full of protein, making the powders less necessary. Yogurt is very simple to make too.....
Add milk to your crockpot, cook on high until it reaches about 180 degrees, then turn off the crock to let it cool to about 110 degrees. If you want plain yogurt, simply add about a half a cup of live yogurt for every half gallon of milk you use. Then put the lid on it, wrap it in a towel and set it in a warm place overnight for up to 24 hours-ish (this isn't an exact science) and presto you have plain yogurt. If you want a Greek style yogurt, I put coffee filters or cheesecloth (normally coffee filters because well I drink coffee a lot and always have them on hand) into a strainer bowl, set that in another bowl and let the yogurt strain for a few hours in the fridge. The liquid in the bowl is the whey...tastes kind of lemony to me.
If you want the yogurt flavored and sweetened, I add half honey and half sugar or stevia up to about a cup and a half per gallon of milk used (a cup and a half total of homey and sugar/stevia) and vanilla extract when the milk reaches 180 degrees. The heat will dissolve any sugar or stevia, and it soaks in better to me. When the yogurt is ready to eat, I add dehydrated fruit and sometimes granola (also homemade) to it. I like making this stuff homemade, so that I control the amount of sugar and other stuff. I even make my own vanilla extract and butter for those reasons. Using raw milk for some reason doesn't affect my milk allergies nearly as much, and I found a farm who sells it for about the same price as pasteurized milk in the stores, so check around to see if you can buy it. I can't say these are "diet foods" but since I started making my own yogurts, butter, and such, and switched to raw milk, I have lost a bit of weight so who knows?

And I read your other post about the mason jars, I actually loved the whole salad in a mason jar thing, I had read about this and thought wow, it they even keep the salads so fresh too.

I have a Blendtec blender, I went to see if it would fit one, but its square

and when do you think...at the beginning? or perhaps when you turn the heat back?

i've got a few vanilla beans to use, and it could be custard, but yogurt sounds better! :)

I've never tried making it vanilla this way, but if you put them in when the milk is 180degrees, and make sure to fish out the beans, it might work? Let me know if you try it, how it turns out please.

I was having fails with my yogurt too, and then I went back to my recipe, and saw that I wasn't getting the milk hot enough at first. I went to 180 degrees with the milk, and it turned out again. I guess that was the problem. Also, when a have to buy a starter culture, anything leftover, I put into icecube trays and freeze it....it will last at least a couple weeks this way.
I take out the same recipe everytime and do the same, I store the starter, and when it wasnt turning out I made sure to pay attention and dumped all the starters in my freezer for a new start batch, and same thing... I mean how on earth can you make the recipe for one year straight and it turn out perfectly and then return to that recipe double check everything twice more and it be one big fail, I double checked everything, then ...I just got tired of making it.

And I dont really prefer store bought yogurt, but if I cant make it anymore I have no choice lol

I will try your method because it was something I saw done before and I'll give that a whirl when I go to attempt this again.

Hey DH,
I have one for you Sis.

-I like taking 5 lbs of bacon and drowning it in bacon grease. (Until it ends up weighing 6 lbs)
-I then take the bacon and roll it in butter. (8 lbs of it)

-I slice it up in neat little squares, then proceed to roll it in bacon bits.

-I deep fry it in bacon grease for an hour.

Let it set for 10 mins, then tuck it in a pork chop.

I put a single piece of lettuce, as a side dish. (remember, we want the stick with the whole entire meal being healthy?) :)
It's a quick little dish, if you're looking for something low fat?

I cant tell you what I have lost I dont go to a gym to weigh in like him, but I havent been working hard at it this week so I have no clue.

This week is my failure,

Once I did this for fun, I ate fat only an entire day before I was supposed to have my blood drawn, I was curious to see what my blood cholesterol would be and wanted to prank my doctor in case it would be high. I ate something similar to pork rinds all day that we have here, it's like that but no skin in it, just fat and maybe tiny pieces of meat in it. Dont remember if I had some lettuce but I might have. Well it was slightly elevated, but just slightly.
I like Reborn's recipy, it's perfect. I only wouldnt fry it for so long.

Anyways back to low fat recipies...
Thinking of something that works for your hubby or you, the only problem is that all my recipies are approximate so I'll try mainly to give ideas so you are not a slave to the kitchen, as you two have different tastes. I'm thinking of cold salads because they are easy to make and so handy for this, some can sit in fridge for a few days and stay nice and fresh.
Some ideas:
-Lettuce, tomato, chicken and croutons?
-Does he like beans? It is a great side dish, it is a good food for fat loss and also I know this great salad, you need boiled and strained azuki beans, boiled and strained corn, chop some leek thinly and soak it for an hour or more in vinegar with added salt and pepper. Make sure you salt and pepper enough because this will flavor your whole salad. Mix the beans, corn and leek thoroughly. It tastes yum, looks colorful and it can sit in fridge for days.
-This one can also sit in fridge for days (and is meant to; regardless, not so with me): boil potatoes, not too soft, peel and cut them into thin slices (about quarter of an inch) chop some onion (preferably purple/red one, for the color). Marinate the onion for an hour or more the same as described for leek. Then line it up in a dish, a row of potato, then drizzle with a bit of marinade and spread some onion on top, then again potato and so forth finish with potato and drizzle on the top. The taste becomes perfect when it stayed in fridge overnight or so, best make it in the evening for the next morning.
-Low fat versions of coleslaw. There are versions with yogurt I believe.
And I'm sure you know many tasty cold salads yourself.
I'll think of more ideas...

Theres something wrong with you two LOL

I can actually relate to a point because me and my husband used to do that body for life diet by Bill Pillips, he has a book, and it always worked for us, I have my husbands transformation pictures, because he was over 300 pounds and come to 230-40 somewheres around there. But that always worked, and so well he still does it, he is out doing the grocery shopping now (all excited) because its a once a week eat everything you want day. That means WHATEVER and AS MUCH as you want. I recall my first week of doing it I was in tears because I though theres just no way this is going to work and that that this one day will cost me two months in dieting, but I promised I would try it once (to see) besides back then when I was more into natural bodybuilding I could take off weight much more easily (much faster) and it really was that big of a deal. And so we both did it and I was like 9 pounds heavier by the next day (just to give you and idea) but by Friday (I kid you not) I was 12 pounds lighter, and that diet just always worked for both of us.

He loves pork rinds too, they have those made fresh at a flea market we had gone to here in SC (fresh are the best) I was thinking of making them homemade, I never did, but cha know... I dont think thats such a hot idea

How the man has lived this long will go down in the history books,

I can eat all of what he doesnt but Im not a health food nut though, I tend not to lean towards anything much of substance in any foods (which are lowfat, low flavor and high in vitamin content) its like the more vitamins the worse it tastes or something LOL

Still I will try stuff stuff though, especially if I have it sitting around, I would experiment if it sounded a little good

Gotta chime in with an optimistic thought here. Actually, ALL food is healthy and substantial, in its genuine state. The thing is we process foods too much, while we neglected the wise traditions of our elders in preparing food. Fruit, vegetables, tubers (potato cooked in peel is actually very healthy), grains, legumes, meat, fish, shellfish, nuts and seeds, eggs, dairy (not the low fat versions), sprouted breads, traditional breads that ferment like sourdough, organic honey, molasses, cold pressed oils, organic lard, butter, herbs and spices... This is all healthy for most people nowadays. And that is basically all food that exists out there... minus sugar, flour and hydrogenized fats. Nutritionists try to tell people only kale and avocado are considered healthy foods... but that is just obsessive and nuts okay... LOL

Definitely impossible to make a varied meal plan for him Sis. I feel for your troubles...
I have ideas with eggs but you said lowfat... Maybe some pancakes or omelette with mainly egg whites for breakfast? I've seen there are such versions of pancakes and you surely can find a good recipy...

Hey, if it grows from the ground and dont taste like a fruit I just call it a veggy. I cant get all complicated with my food stuffs.

I do tend to lean to the supreme courts rule on tomatoes being a vegetable too, what can I say? LOL

He will eat eggs, he eats around 20 eggwhites or so a week, he does do that. He tolerates the greek yogurt (he eats one a day) he loves his GNC protein bars, or makes 2 protien drinks, and makes one other thing for lunch (which is often what was left over from dinner the night before).

And what I needed was something like 3 more plain (but half way decent) easy recipes for the week (with a tad bit of a different flavor). Because he will just eat the same thing every single night and I need a little variety (unlike him). But I figured if I could find something we both like, but that is almost never, what he eats is gross (bleh)

I had high hopes for that cabbage dish. I really liked it (more for me then!) I thought he could get around shredded cabbage pieces but he couldnt (he is like cooking for a really picky five year old).

Yeah, plain ol skinless chicken breast, 93% lean ground meat (or lean ground turkey)

Flavors.... (if you want to call it that) ketchup, tomato sauce (which is fine, as long as its not chunky) Adjus sauce (by that the powdered packets) and Chicken gravy (canned or jarred)

Or... he'll even dump that cant believe its not butter spray junk on his (white) rice

And no, he doesnt like pancakes, or french toast, although he likes waffles

You and my sister Marie would be like best freinds, shes into all that healthy stuff organic farming and now shes brainwashing my other sister, what is with you guys? LOL

You all can just sit around and talk brown rice and health food store all day long I just know it.

I think Im just stuck, and thats just how it will be, I will keep my eyes open down here and elsewhere and see if I can find a recipe or two I can make adjustments too I suppose.

There isnt much to work with here, and that has always been my fustration, he stifles any ability to be creative, theres just nothing left to work with to be creative with.

Thanks though, I love to meet the wife of a man who eats like mine (and who can cook) and make something he would find interesting is all.

Herbs and spices alone can make a big difference in meals, with a few additions and takeaways like onions (if possible), and so forth. Mustard, curry, pepper, oregano, thyme, garlic... just some ideas... probably you're already doing it, if so, accentuate... use it to change the sauce dramatically because he seems to eat sauces?

-Does he eat mushrooms? There are great sauces with mushrooms and usually they will go with any meat - my favorite combo is the mushroom sauce with oregano, garlic, mustard. You can also grill them or bake in the oven. Or make a simple risotto with mushrooms, might also add white wine while cooking, it goes very well.

-"Patates sto fourno", my fav potatoes... Greek way. It means "potatoes in the oven", you mix oil, mustard, salt, oregano and finely chopped garlic and use your hands to cover sliced potatoes with this dressing from all sides. Add a bit of water on the bottom of the pan it will keep them soft inside... but will be crispy on the outside... bake... The mix of flavors is amazing when this gets out of the oven.

-You say he wont eat fish... but there is also chicken sushi. You can roll a few with fish and veggies too for yourself and making sushi is fun! Also then you have something fancy to make when your friends come over.

-Would he eat pizza with minced meat or chicken on top, and sundried tomatoes... or tomato sauce and such few ingredients... maybe some lowfat cheese... there are such pizza recipies around and some of them are really yum...

Now please dont say he also hates pizza...? :(

And you know, I just never though of pizza (without the cheese). He wont eat fungus no. Sundried tomatoes where he can actually chew it or reccognize its a tomatoe? No he wont eat that either,

But yeah... he loves pizza, again (bread sauce and cheese, but on a diet no cheese)

SoulWeaver, I really like the sound of those potatoes (and that combination of spices) and I betcha he would even like those sis, in fact I might just give those a try this week and if I do I will come back and tell you how it went.

Do you parboil those potatoes before they go into the oven?

And what do you cook them on and for how long sis?

Lord willing I will try this this week, I love a good picture to it really drives home a "try this"

And I know exactly what you mean about the food bloggers doing that, I love when I can make it work without their special "gotta have" ingredient, I always think, "hmmm, I wonder if they are getting paid by that product or something". I collect spices so I typically have many spices on hand all stored in quart mason jars. However, I betcha I dont have Greek oregano, it does not sound like one of the oreganos I actually have (yeah figures right?) but thats just fine, I know, I can use one of the others (not a problem) I bet it will turn out just fine
