Hey all, I am looking for recipes (low fat).

I start a diet today (Monday) where I actually have to eat more often then I like to because when I only eat one meal a day I get fat, but when I eat many smaller meals I lose weight, its just how its always worked with me and I need to get on the ball and start doing this again.

Sigh...

Its just that detest revolving my life around preparing food for this so much, one meal a day is far more appealing to me (even time wise) then this every two hours eating deal (even if its just getting up to eat smaller ones so often). I think its such a pain.

Anyway, my husband and I went out this weekend, picked up various protien powders and I will chose two or three of those meals as shakes to reduce my time in the kitchen, maybe more who knows?

What I am looking for easy lowfat recipes, especially those where you can make stuff ahead and pull from the fridge.

I was thinking you guys have to have a favorite lowfat recipe of your own, and if you do can you post it?

Just for some ideas sake, have any good ones I can try?

what about beef or chicken stir fry with loads of veggies?

you can make a simple sauce with broth, soy sauce, water, cornstarch and some spices.
(ginger, garlic, onion, etc.)

use a very lean cut of beef, or chicken breasts, or no meat at all, if you prefer.
serve it over some brown rice; make enough for lots of leftovers to reheat small portions of. :)

if you life fish you can cut some fish into small bits (makes it cook faster) and put it in a pan / boil it / put it in the oven as you please. Add potatoes / rice / pasta and veggies.

ie, add this to a "fireproof" dish
a side of salmon, whole or cut in pices (salt and pepper ++ other stuff if you like it spicy)
potatoes , sweet potatoes, carrots (and smimilar) whole or cut in slices / wedges(also with whatever spice you like)
Tomatoes, onions, paprika, garlic wedges
(add sauce if desired)

- leave to cook. (and make enough to freeze for some other time)

He is awful that way

Anything with lean ground meat ( beef or turkey) chicken breast, rice or potatoes for the most part, like someone posted a cabbage recipe, where you didnt have to make those cabbage rolls but it was lowfat and you could just toss it together and that was perfect. Even stuff you can make separate and just pull from the fridge and toss together maybe?

I love vegies, and fish I am cool with all of that, I prefer flounder, and tilapia, the more milder fishes myself.

If you have any recipes along these lines please post them.

He will eat the same thing every night because he doesnt like so much stuff, and the stuff he will opt for is not at all palatable to me. He will just throw ketchup on the plainest of things he does like lol

I seriously cannot do four things at once without getting frazzled, I should start this diet next week (lol)

are you looking for mostly casserole type things?
and hoping you won't have to cook two separate meals each day? :p

i have a half decent meatloaf recipe that's easily made lowfat...
(i would add skim milk or no-fat yogurt)
but all the people in this house are disgustingly thin, and i tend to use
butter, cream, and all that good stuff in most casseroles.

so sorry!
ps--the human body does need some fats...brains are composed primarily of them...
when i wanted to lose weight, all sugars and simple carbs were the first to go. :)

Yeah he is a meat and potatoes guy for sure, and that will work sis, is it any decent? Nothing worse then dry meatloaf. Im not much a meatloaf person but I just asked him, I said this "psycho" woman on line has a meatloaf recipe, sound ok? LOL (spoofing on your user name) but he missed it

He said yeah he would eat it, he will probably just squirt ketchup all over it that is sort of what he does LOL

I really need to master the art of making skinny foods taste good but I dont want to be bothered either.

i think it'll work, especially if you use the yogurt?

chop onion and garlic; sauté in 2 t olive oil. (like, a medium onion and 2 cloves garlic?)
2-3 lbs lean ground beef
2/3 c milk or yogurt
2-3 eggs (one for each pound of meat)
1/2 tsp thyme (ground or leaves)
2-3 t good, grainy mustard
2-3 T worcestershire sauce
1/4 t tobasco
S&P
2/3-1 C oatmeal or 1 1/3 C fresh bread crumbs
(if you want to use prepared bread crumbs, cut it back to no more than a cup)

now---the recipe calls for 8 slices of bacon laid on top before you cook it.
you can skip it; i usually do.
it also calls for a glaze to be put on when it's about done...pull the bacon off, first.
but the glaze recipe is
1/2 C ketchup
1/4 C brown sugar
4 t apple cider vinegar, which i never add. :)

if you wanna skip the sugar, he can slather it w/ketchup.
maybe he figures all ladies are a bit psycho? :p

oh, yeah---350 degrees for about an hour, but keep an eye on it so it won't overcook?
that's when it gets dry, in my experience.

i'll keep thinking! ♥

DesiredHaven, just be mindful that we have to get energy either from fats OR from carbs OR from protein. I assume you are not going high protein for the sake of your kidneys. So either fats or carbs must be high. It cant all be low and skinny.
If you go both low fat and low carb it is not sustainable and you will start binging soon. We cant live on salads. Calories can be reduced for about up to 10-15%, anything more surely triggers the starvation mode and the body tries desperately to gain fat, secretes very hormones that promote eating and so forth. The body thinks that there is a famine outside and fights hard to gain weight to make sure you survive. Cant fight something that compelling for a long time.
For weight loss, I'd rather try low carb than low fat, although it depends on individual metabolism, for majority people low carb is what works to melt fat, not low fat. Fat is important because of fat soluble vitamins and other things, too. If cholesterole concerns you, a small handful of raw sunflower seeds per day renders it perfect (worked perfectly for my MIL).
Forgive me if you know all this already, I just thought it was an important info to be out there. :flower:

And just to give you an idea (in respects to his simplicity) this is what he will eat on a diet

Tonight, he ate rice with baked chicken (with "a can" of lowfat chicken gravy) and that was dinner

Tommorrow he might have cooked lean ground beef (with that fake adjus stuff) with rice (or noodles to change it up the next time) or the same on a baked potato.

Thats what he sees as "changing it up"

Its very tasteless

He will change up the chicken and rice (with the gravy) to chicken and rice with... barbeque sauce (instead)

Weird menu huh? Thats why I cant stomach it. That his rotation.

Notice nothing that has anything with veggies in it, he doesnt eat fruit or anything like that.

I am now convinced its all a myth that if you eat your veggies you will grow big and strong, surprising he is without all of that. But Im sure your meatloaf will be perfect for him, I wont tell him I am sticking oatmeal in there he will not put it to his mouth if I tell him that LOL!

No, I appreciate it SoulWeaver (your help) and I can always use better ideas. I was a former natural bodybuilder who got my husband into the same in our younger years, so I do know a little about what I am doing (at least typically in respects to myself) or how to get the desired results that worked for me, but neither one of us were ever health nuts (like healthfood store stuffs, brown rice and all of that) that just never went down with any ease.

But now, its not about looks (well it is sorta because I look like crap) but I just need to take off the pounds, and get moving to feel better because I have not been able to do what I used to for many years.

He still lifts but I cant, and after all these years, not doing so I look like his mom now, sheesh

This menapause stuff stinks, whats up with this?

I snag my favs from just about everywheres too.

Then I keep a simple online forum that holds all my recipes in one forum, and all my favorite playlists (music vids) on another, and then all of my studies on another (etc). That way I never have to worry if my puter crashes its all over there (and my very favorites of all of them are the first to be printed out on paper (organized in binders).

Every new recipe that sounds good (for whatever purpose) I put under my "must try this one" thread And once its tried, and if its REALLY liked it gets deleted from there, then printed off and correctly categorized in the correct place (both online and off).

Which is great online because you just click "search" on the forum and you got the recipe for supper at your finger tips.

I don't really have a recipe offhand, but I do have a tip for you. Canning jars (regular mouth, not wide mouth) can be screwed onto a blender blade in most blenders, so you can put your fruits, veggies or whatever into jars, add a ring and lid, and then set them in the fridge. Then when you're ready to make your smoothies, or slurries or whatever they are called now-a-days, you can just take off the lid, add your yogurt, protein powders or whatever, screw-on the blender blade and blend away. You can keep fruit and veggies in the fridge in your jars about as long as in the veggie drawer, so you can make up several at a time (say a week's worth) toss them into the fridge, for an easy-to-grab-and-make smoothie.

Take a couple of chicken breasts and dredge them in thyme, pepper and salt (easy on the salt -- it is NOT a dieter's friend). Pan fry them in a tablespoon of olive oil. Remove the breasts, add 3 tablespoons each of balsamic vinegar and honey to the pan and cook until reduced slightly. Add the breasts back in to coat them with the sauce. Serve with rice and (I like) steamed snow peas. Yum...

My hubby loves this and didn't even realize at first that it was extremely low fat. Has tons of flavor.

Ooooooh also, if you make yogurt, if you strain the whey off, it's full of protein, making the powders less necessary. Yogurt is very simple to make too.....
Add milk to your crockpot, cook on high until it reaches about 180 degrees, then turn off the crock to let it cool to about 110 degrees. If you want plain yogurt, simply add about a half a cup of live yogurt for every half gallon of milk you use. Then put the lid on it, wrap it in a towel and set it in a warm place overnight for up to 24 hours-ish (this isn't an exact science) and presto you have plain yogurt. If you want a Greek style yogurt, I put coffee filters or cheesecloth (normally coffee filters because well I drink coffee a lot and always have them on hand) into a strainer bowl, set that in another bowl and let the yogurt strain for a few hours in the fridge. The liquid in the bowl is the whey...tastes kind of lemony to me.
If you want the yogurt flavored and sweetened, I add half honey and half sugar or stevia up to about a cup and a half per gallon of milk used (a cup and a half total of homey and sugar/stevia) and vanilla extract when the milk reaches 180 degrees. The heat will dissolve any sugar or stevia, and it soaks in better to me. When the yogurt is ready to eat, I add dehydrated fruit and sometimes granola (also homemade) to it. I like making this stuff homemade, so that I control the amount of sugar and other stuff. I even make my own vanilla extract and butter for those reasons. Using raw milk for some reason doesn't affect my milk allergies nearly as much, and I found a farm who sells it for about the same price as pasteurized milk in the stores, so check around to see if you can buy it. I can't say these are "diet foods" but since I started making my own yogurts, butter, and such, and switched to raw milk, I have lost a bit of weight so who knows?
