Spanish rice with ground beef?

Spanish Rice w/Beef

1 lb ground beef
1 medium onion, chopped
1 medium green bell pepper, chopped
1 clove garlic, minced
1 cup beef broth
1 cup tomato sauce
1 cup uncooked rice (brown or white)
1 10 can diced tomatoes & green chilies (undrained)
1/4 cup salsa (mild or medium)
1/4 tsp chili powder or chili seasoning


Brown beef, onion, bell pepper, & garlic in large skillet (cast iron works great). Drain off excess fat; add the remaining ingredients and heat to boiling. Reduce heat to medium-low and cover; simmer 30 minutes or until rice is tender (45-50 minutes if using brown rice).

I make this dish about three times a week but normally use leftover chicken and 1 cup of chicken broth. I also add pink or pinto beans to it and serve with warm tortillas, sour cream and guacamole.

don't know if Rice a Roni is gluten free? (two kids with Celiac)
but as far as the lazy goes...tourist, you're amazing! :)

Violet, for those of us faint of, er taste, i can omit the chiles, yes?
i love the alternatives!! FMOTD award! ♥
(family member of the day...the kids award it on a regular to one another...hehe)

:DYou can omit anything you want. I change it around to whatever mood strikes me. Sometimes I make it without chilies. Sometimes I add pink or pinto beans in the mix. Sometimes I even make it with turmeric and lamb. haha!!

My mom made something she called Spanish rice, but it was just rice cooked with tomato sauce (Prego) poured on top, and then a fried egg on top of that. I didn't know there was any other kind of Spanish rice. :D

P.S. It was quite good.

Prego came out when i was a young wife. till then, i made sauce. (!)

when Mark's dad and his wife came for dinner, step-mom-in-law complimented me on the sauce.
i was embarrassed to say it was from a jar, but she so sweetly said,
why would anyone make it from scratch when this is all natural and tastes sooo good??

that recipe sounds delish, PC! :)
