Marinated Mushrooms


10 small fresh whole mushroom caps (not frozen ones) 1 tbsp finely chopped parsley

1/4 cold pressed extra virgin olive oil 2 cloves of garlic ,crushed or minced

1/4 apple cider vinegar or white wine vinegar 1/4 tsp of sea salt or kosher

2 tsp finely chopped onion (white or brown) 1/4 tsp mustard seeds or peppercorns

1/2 cup thinly cut of red bell pepper strips 1/2 tsp fresh oregano


Wash the mushroom caps and ,remove stems and dry in paper towels gently. Combine the rest of the ingredients for the marinade. Transfer them in the glass dishes with lids and then refrigerate them overnight .
