INGREDIENTS:
Serves: 3
2 chicken breasts
2 tablespoon vegetable oil
1 1/4 cup water

1/2 tsp. salt
1/2 tsp. thyme leaves
1/2 clove garlic, chopped
1 1/2 - 2 tablespoons Jamaican/West Indian curry powder

In a separate dish
1 small tomato, chopped
1 small onion, chopped
1/2 celery stalk chopped
1 potato cubed
1 small carrot chopped


Clean and cut chicken breast into 1 inch cubes. Season chicken with salt, thyme, curry powder and garlic. Sprinkle a little curry in the hot oil and stir fry chicken for approximately 5 mins. Finally stir in vegetables: tomato, onion, celery, potato and carrot. Add water, lower heat, cover and simmer for 25 minutes.

This is best served with white rice and or roti.
