Here's a recipe I've enjoyed for years and I wanted to share it.
Your needed ingredients are a package of Portabella mushroom caps, some shredded Italian cheese, and some prepared spaghetti/pasta sauce. My sauce is a leftover from making WAY too much one night, so I bagged it and froze it. Already loaded with veggies, spices, spicy Italian sausage - bonus.
You'll need to remove the stem and the gills from the caps before proceeding. Work gently with a small spoon, and get to work.
3 caps ready to go. I have them on an aluminum foil lined and sprayed cookie sheet...just to help my cleanup later.
Generously spoon your sauce into the caps. Go light or go heavy. It's all good.
Add cheese. Again, go light or go heavy.
All dressed and ready to go into the oven. I dressed these with a sprinkle each of Italian seasoning and some fresh cracked black pepper.
Bake in a pre-heated 350 degree (F) oven for 30-35 minutes. You should begin smelling them at about 15 minutes, but refrain from opening the door to peek. Every time you peek, you add 5 minutes cooking time.
Supper! A Mushroom Pizza and a side salad of mixed greens dressed lightly with ranch dressing. Satisfying and filling.
