Recipe courtesy of canolainfo.org.

Ingredients:

1 tbsp. canola oil, divided
4 oz. extra lean ham, diced
3 cups green cabbage, coarsely chopped
1 cup chopped onion
1/2 cup matchstick carrots
1 tsp. dark brown sugar, packed
Pinch of salt

Directions: Heat 1 tsp. of the oil in a large nonstick skillet over medium-high heat. Tilt skillet to coat lightly, add ham and cook until browned, about 3 minutes stirring frequently. Set aside on separate plate.

Add 1 tsp of the oil to the pan and cook onion 3 minutes or until translucent. Add the remaining 1 tsp oil, cabbage, carrots and sugar. Cook 3 minutes or until cabbage is beginning to brown on edges, stirring as you would a stir fry. Add ham and cook 1 minute. Remove from heat, cover and let stand 5 minutes. Stir in salt. Serves 4-5.

good recipe

When I've done it, I use a combination of olive oil/Italian salad dressing rather than canola. When cooked, I top it with gluten free soy sauce and perhaps some anchovies.

I absolutely love anchovies! It may surprise some folks to know that they are prominently featured on kosher recipes.

Yummmmm!!

This is delicious! When I do this, I will often use some five spice and honey instead of the salt and brown sugar. I don't add the ham to it, but rather use it as a bed for a meat dish, instead of rice or pasta. Fewer simple carbs and tasty!!!

Anchovies.. gross..lol
Not at all-). I only came to this thread now, and read one little bit on anchovies, which are really quite popular here fried fresh, not the salted tinned type, or dried in the sun but not very salty. Because theres lots of it in the surrounding seas and the Pacific, its a staple almost as it can be stored without worry in the hot weather--and not so salty as i see it is commonly processed and served in italy and other places.
