Ingredients:

1/2 cup olive oil
1/4 cup white wine vinegar
1 tsp. rosemary
1 tst. thyme
1/2 tsp. garlic powder
1/2 tsp. oregano
3 cups cucumbers, diced
1/2 cup red onion, thinly sliced
1/4 cup feta cheese, crumbled
3 cups tomatoes, diced


Directions: For the herb vinaigrette, mix oil, vinegar, and spices in large bowl with wire whisk until well-blended. Add cucumbers, tomatoes, and onion, toss to coat well. Cover. Refrigerate at least 1 hour or until ready to serve. Just before serving sprinkle with feta cheese. Serves 8.

early this morning, waaaayyy before I got up, hubby put together one of our favorite summer surprizes...
it consist of various vegetables, the best are home-grown, but local Farmer's Market is great also...

you must pick the size of the container that suits you - we used a (2qt. glass canning jar)
because we can eat on this for a loooonnnng-time, YUM, YUM..it just gets BETTER...

cut-up the veggies that you like the most,,,(cucumbers are our choice for the base,
along with squash, inions, cauliflower, peppers, plus you can add your favorite spices, ETC...

into the JAR we put -
our liquid first, to about half, and that is, 3/4ths Braggs Apple Cider Vinegar, (because it has
the MOTHER in it and is loaded with so many healing properties not to mention, Pro-biotics,.,)
then:
1/4th distilled water -
1Tbl. of sea-salt -
1Tbl. of organic sugar -
several fresh garlic cloves -
the longer it sets, the better it gets...

we have enjoyed this treat for many, many years and also, it makes a great 'gift' to share
with your friends...
