slow cooker pumpkin oatmeal

i love this when the kids are home. :)

2 C. uncooked steel cut oats
1 15 oz can pumpkin pureé (NOT pumpkin pie mix! also organic pumpkin just tastes better :))
2 t. pumpkin pie spice (i usually just add cinnamon, cloves and allspice)
1/4 t. salt
1/4 C. dark brown sugar (or some molasses, honey, stevia...whatever you prefer, it all works)
2 C. unsweetened coconut milk
6 C. water
1 T. vanilla extract
maple syrup, dried cranberries or raisins, chopped nuts at serving time


place first four ingredients in well greased crock pot
stir in the water and coconut milk

cover and cook on low about 6 hours... or warm 8-9, then zhuzh it up to a higher heat when you're making the coffee. ;)

add the vanilla at the end, and top with whatever suits you.
my kids have added peanut butter, and say it's good. :rolleyes:

This would only sound good to me, IF I liked pumpkin or oatmeal. :( lol

r-e-a-l-l-y grease the slow cooker. :p

and feel free to come visit! here in the northeast, the leaves are changing and the temp last night was in the high 30s. (brrr)

i have reverse seasonal affective disorder. once summer ends, the sadness lifts. ;)
