These are so good, It like having pumpkin pie at the bottom of your cupcake YUM!
1 15ounce can Pumpkin pie Puree
3/4 cup sugar
2 large eggs
1 tsp. vanilla extract
3/4 cup evaporated milk
2/3 cup flour
1/2 tsp. Ginger
1/4 tsp. ground cloves
1 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
preheat oven 3.50
line your muffin pans with foil liners, paper ones stick or pam spray will work
Mix together with mixer Pumpkin, sugar, eggs, Vanilla and evaporated milk
stir In flour, spices, salt, baking soda and baking powder
mix until smooth, fill each muffin foil with 1/3 cup of pumpkin mixture
bake for 20...after they cool put them in the fridge for a hour to chill
Top with cool whip or cream cheese frosting or any other topping you would like
