I made baked apricot chicken yesterday, and I made a batch of tofu the same way for my mom. She loves it!

Tofu sliced (firm or extra-firm)
Apricot jam (no HFCS)
Italian or Russian or Catalina dressing (equal parts to jam)
Onion powder
Garlic minced
Curry powder
Paprika
Tempura-style breadcrumbs

Mix all except crumbs and tofu. Pam a pan. Dip tofu in the sauce. Lay on pan. Sprinkle with crumbs. Bake 15 minutes. Turn. Put more sauce and crumbs on tofu. Bake 15 minutes. Serve hot with brown rice.

I have a lot of respect for anyone who can maintain a vegan diet. I've been vegetarian for goin on 4 years now. I spent about a month or so on the vegan diet, it is sooo strict. I would have just about had to quit eating any form of processed food because there is milk and egg in just about all of it. Plus I got tired of reading ingredient labels. Favorite veggies: peppers, celery, spinach, well all of them I guess. Fav. fruits: pinnaples, bananas...well all of them too lol. I like hommus and guacamole dips with whole grain crackers for snacks. I would have to say my favorite drinks are energy drinks even though I hear they are bad for me :( When it comes to juice I am addicted to pomegranate/blueberry juice.

ok. this IS wierd. but try going Kosher. you dont have to eat meat, but the hebrew law of what you are eating is good for you too. try it. it's kept folks healthy for near 6000 years.

I'm not vegan but we have dairy allergies so we like a smoothie made with coconut milk. :)
1/2 can coconut milk
1 tsp cinnamon
1 cereal bowl overflowing with your favourite berries: we like a mix of strawberries, rasberries, and blueberries
1 banana
1/2-1 cup OJ
honey to taste
Blend it all up in a blender and yumm-o!! It's one of our favourite things for breakfast. :)
