I need to eat more veggies, do you have any tasty ways of preparing them? I really want to start having a healthier lifestyle, but I have some bad habits to break! lol.

I don't really have any suggestions for cooking spinach, except maybe to put it in a quiche (which sort of defeats the purpose), but I had to say I love your panda picture!

I would say you can take a tbs of oil and put it in a pan and let it heat until hot. Than throw in some fresh spinach add salt and pepper and some red chili flakes. Put a top on and let it cook for 3-5 mins. You could also make a salad out of it.

My kids are not really picky eaters....but after you make the same things over and over again they can start to whine at meal time...sooooo, I came up with this one day out of need for variety and they ask for it all the time now.

For my family of 4, (me and three children), I cook about 3 cups rice, and add a variety of veggies that I can steam. Such as frozen broc./asp. mixture. Or frozen peas and carrots cooks till still crisp tender.

Mix veggies with cooked rice, add some butter/marg. (approx. 2 tbs), and then a generous amt. of Fresh parm. cheese. (approx. 4 maybe 5 Tbs.) And then a very small amt. of red pepper flakes. (1/2 teas)

Mix it all up...it ,makes a great side dish. I have even added pine nuts before when I had some left over that I needed to use.

The nice thing about something like this is you can add just about anything..sugar snap peas, lentels, brussel sprouts that have been cut in quarters.

How do you reconcile the responsibility to eat HEALTHY with the main objective of (most) chefs, which is simply to make food 'taste good' -- irrespective of reality (of the COST of eating certain foods, while simultaneously ignoring the BENEFITS of eating other foods)?
