Tim Tam Cheesecake

Okay as promised, here is one for my fellow Aussies,(or anyone else I've mailed Tim-Tams to)...

This one is much easier... I promise :)

Ingredients:

250g plain chocolate biscuits
150g butter, melted
3 teaspoons gelatine
1/4 cup water
2x250g packets cream cheese, softened
1/2 cup caster sugar
1 pkt Tim Tam biscuits, chopped
1x 300ml tub thickened cream, whipped
1x Cadbury Flake chocolate bar

Method:

1. Process biscuits until mixture resembles fine breadcrumbs. Add butter; process until just combined. Press biscuit mixture evenly over base and side of 20cm springform tin, cover; refigerate about 30 minutes or until firm.

2. Sprinkle gelatine over water in a heatproof jug; microwave on high 30 seconds or until dissolved, allow to cool slightly.

3. Beat cream cheese and caster sugar in a medium bowl with electric mixer until smooth. Add chopped Tim-Tam's to cheese mixture and combine well. Stir slightly warm gelatine mixture into cheese mixture; fold in cream.

4. Pour mixture into prepared tin and garnish with crumbled flake chocolate. Refigerate about 3 hours or until set.

** Katie's tips -- I have only tried this with original flavoured Tim-Tam's, but if anyone want's to give it a go with another flavour and let me know how it goes, I'd love to know...I'm thinking blackforest? Remember though, the flavoured packs, usually have less biscuits in them, therefore you may need more than one packet for the recipe :)
Also, same tips I gave for Mars-Bar cheesecake also apply here... line the tin with greaseproof paper... trust me it's sooo much easier, and whack it in the freezer to speed up the setting process. **

Now Raeshelle you have to do the hot drink tim tam trick.........bite off the ends of a tim tam, then dunk it in say hot coffee.....suck up the coffee through the tim tam and quickly shove it in ya mouth .......:D........you will become an honorary Aussie after that ;)

It has to be diagonally opposite ends, Rae... and you suck up the drink through the Timtam... like a fudgy straw. This process is called a Timtam slam :)

can she be an honourary Australasian?? LOL, we slam here too....tim tams are da bomb........Ive got the ingredients for the cheescake, with a bit of a 'joy twist' cant wait to make it!

I made this recipe again just yesterday, and this time I used Caramel TimTams...sooooooooooooooooo good!

I might get adventurous and try another flavour next time. Maybe Mint crush.. or oooh 'blackforest'...
