One of my most favorites meals to whip up for lunch is what I call, "Chili Rice".

INGREDIENTS:

- A can of Wolfe Brand Chili. I'd personally get the Turkey kind. It tastes just as great as the regular brand, but it also cuts the calories in half! (If you use only half the can, that is only 200 calories! Not bad!)

- 1/2 cup of rice (I prefer brown, since it is healthier, but you can use whte rice).

INSTRUCTIONS:

Pour 1/2 cup of water into a pan and let it fully boil. Once it is fully boiling, pour the 1/2 cup of rice in to it, while stiring. Cover it with a lid and take it off the burner (don't forget to turn the burner off!) Let it sit for about 5-6 minutes.

Next, warm the Chili in a microwaveable bowl for about 2 minutes and 30 seconds. Once the time is up for both, mix together and enjoy! Bon Appétit! :)

I like cutting the calories in half. What vegetable dish would you recommend with it?

random interruption but if it were me I would just make a savoury rice, boil it up with some veg in there. some beans and mushrooms and onion maybe (no mushrooms for me tho, I am allergic :( )

A lot of people don't understand how hard things can be for those with serious allergies. Some people can eat a handful of peanuts and die. Or die after a bee sting. Serious allergies are serious business!

true, although I am not that allergic to mushrooms but it does make for an uncomfortable rash. I have other more serious ones but not to food. My friend is allergic to the pesticides used on oranges and swells like a balloon if she even gets splashed with orange juice.

One thing I'd like to add to this thread is that if you use this cooking method for the rice, you MUST use instant rice. It you use regular rice, it will still be hard as a rock after 5 minutes :).
