Im doing Lent for the first time in ages and I feel called to give up meat during that period (not meat derived products just the nice juicy muscle bits :D)

This totally goes against the grain for me since I love to laugh at vegetarians or even better vegans cos their so silly, and Ive been a staunch meat person my whole life and I consider finding new and different ways to eat and cook meat a hobby of mine.

So, can anyone recommend some decent vegetarian recipes or recipe websites that are yummy and filling? Im terrified of doing this and just being hungry all the time and never having that space that only a steak could fill being empty.

By the way, I love vegetables as well (I'll eat anything but brussels sprouts or anything sprout like). Also my husband is definitely not going meat free for Lent and for the sake of my sanity I want us to eat the same thing, but just add a bit of meat to his vego plate to shut him up LOL.

Lol

My brother mocks me every day for being a christian, but I have the other laugh while I try and convert him.
Now I don't want to be a vegetarian permanently nor make it a religion but can you think of it as trying to explain your lifestyle to a ignoramus like I do to my brother? :D

I've been a vegetarian for about 6 years now, I dont really like that you said you laugh at us because you think we are silly, but I'll share some options with you, there are several meatless "meat" brands. Most of them you can find in the Organic & Natural freezer section, Amy's, Quorn, and Morning Star brands are all meat free, and have a variety of things you can try. I would say go with Quorn, it's the best tasting! :)

Made this recently. Added a lot of cilantro, basil, spinach, and more tahini than was really required. Fenugreek, cumin, and lime or lemon juice are good additions to the rice - this is true in general, not just this recipe.

It's not one of the "replacement" recipes; i.e. it's a dish in its own right and nothing in there is meant to approximate meat.

This is a good, easy introduction to quinoa if you've never had the grain before. Again, I end up adding more cilantro and spinach and herbs than the recipe recommends. Sometimes, this is because the top comes off the herb shaker. :-\

The feta is key if you're not going vegan. If you're avoiding dairy, you'll need something to compensate for the lack of salt and fat.

... Now that I think of it, most of my favorite recipes are either in casserole dishes or stews. This may have something to say about how lazy I am in the kitchen.

I am not trying to make any vegetarian converts and it has nothing to do with religion, just a personal conviction.

Like Chesed said, there are many meatless ''meat'' products you can get in the store. I am not sure about the availability of those things outside the U.S. though....

Since I am not sure what sort of tastes you prefer, I'd recommend using google to search and find recipes containing ingredients that suit your palette.

I Have recently become a vegetarian and I have to say it has not been as difficult as I thought it would be. Lentiles are really good and filling. I love them... I fry some onions and garlic and mix that with the lentiles I have already cooked in some water. Before I was a vegetarian I also put some bacon and I have to say it was even better but your husband can enjoy the bacon maybe :) I like having rice on the side with lentiles but that can be also because I am peruvian and we eat rice with just about everything

Heres another question..

Do any vegetarians also cook for meat eaters?
My husband will remain eating meat while I am going without, and Im wondering should I prepare the same meal and just add a pork chop or chicken leg on the side? I don't want to make more dirty dishes than I already do.

I do. It's easy to cook everything vegetarianly in one pan then toss in chopped chicken and use the leftover oils/herbs as a base. Especially easy with pastas.
