I am looking for some meal ideas for the hot weather

I know a few good sides, but no true meals. The kids and I love salads and grilled veggies, but I have no ideas on actual meals. Any ideas?:)

How about a pasta salad? It can be with anything you have in the house, but does need pasta, cheese, and usually lunch meat. From there, most anything goes. Peas, lettuce, olives, green beans, tomatoes, onions, celery. If the onions are strong you can let them sit in cold wsater for awhile, then drain. I like scallions best.

For dressing, I always doctor mayo. Got a lot of options there, too. Yogurt, cream, a good vinegar,basil. If it gets too runny, a little sugar thickens cream. And a lot of tasting to check flavor.

Makes a whole meal.

If you still want hot meals, without all the heat, use Crock pots. They definitely do not produce anywhere the amount of heat an over or stove would produce.

For colder foods, you might try wraps. It's basically a sandwich. But instead of using traditional bread, use a tortilla or some similar type of flat bread.

I love useing the crockpot. It is great in the summer time too. Its great to turn it on in the morning before I go to work and come home to a hot meal. And oh! The aroma when you walk in the door is so awsome.
Herea a recipe for frozen turkey breast. If the turkey breast comes with a gravy packet you will need to defrost it first to remove the packet. Otherwise you can put it in the crack pot frozen.
1) Put turkey breast in crock pot.
2) mix together a package of onion soup mix with a can of jellied cranberry sauce.
3)pour over turkey and cook on low for 8 to 10 hrs.

Though this isn't cold, we love to have grilled pizza during the summer. It's fun, delicious, and quite easy. :)

Others have mentioned wraps and that reminds me of my favorite summer time wrap. At school they called it the American BBQ Wrap. We like it because though there is some light cooking required you can cook ahead of time and have it for hotter days since you eat it cold.

* Choose a wrap of your choice
Fill with:
- Rice (cooked ahead of time)
- Cheddar cheese
- Caramelized onions (cooked ahead of time)
- lettuce
- BBQ sauce
- tiny pieces of a toasted wrap to add some crunch

We use the grill in hot weather, too. :D

Sometimes, when I just don't want to heat the house (and the fam has grown weary of the crokpot) I do a quick stir-fry in a skillet. Chicken or beef, lots of veggies, a suace, and you're there! Other than cutting things up, it really is pretty fast and just one pan!! (unless you want some rice, and my family always does) :)

I checked the internet for stir-fry sauce recipes that looled like my picky family wouldn't reject, but I can post the ones I use, if you like.

Salads are good in the summer. You can add chicken or beef, low-fat cheese, nuts, eggs, rinsed kidney beans...along with the healthier veggies of course (carrots, green pepper, onion, cucumber,etc.). These are a meal in themselves. Just have to be careful not to put too much of the higher calorie items in :)

tacos might be good for kids

baked beans with grilled hotdogs are something most kids like too

I just had a green bean salad that was wonderful. I have eaten it as meal for lunch and as a side dish with bbq chicken.

*Steam fresh green beans with peppers until they are cooked to your liking but not to the point of falling apart (I used red and yellow)

*Let them cool or run them under some cool water

* Put the green beans/peppers in a bowl once cool and add small chunks of cheddar cheese

* Mix lightly with italian dressing

It's delicious! :) I have made it with sun-gold cherry tomatoes as well :) Basically it's like a pasta salad without the pasta.

^^^^ note: I only rinsed with cool water when I made this without the peppers. I don't recommend rinsing the green beans/peppers in cool water, rather just let them cool on there own or put them in the refrigerator.

I'm horrible at giving recipes because I eyeball measurements and prepare to taste. I usually follow the recipe once and then after that I do my own thing. One of my favorite things is an English Pea Salad.
1/2 a bag of frozen peas. I just thaw them in lukewarm water. You do not want to cook them. But do drain the water you thawed the peas in.
2 or 3 slices of bacon. Go ahead and cook bacon crispy, then chop it into little pieces. Save a tablespoon of bacon drippings.
You will need some shredded colby or cheddar cheese, you can add as much or little cheese as you want
For dressing:
1 cup of mayo
1 tbsp of the bacon drippings
Juice of a half a lemon. I like a lot of lemon so I may add more or less depending on taste.
A dash of pepper
A dash of salt
Mix the dressing together, After dressing is mixed start adding it to a bowl that contains peas, bacon, and cheese. You may not use all dressing, if you don't want to waste the goodness you could always thaw more peas to add to salad.
I hope you enjoy this is one of my favorite sides and it's really easy to make.
