This is not cheap, and it’s not quick. But it’s fun and delicious. I brought this monstrous frozen desert to home group the other week and a friend named it for me. We've been carving off slices of it and indulging in little moments of guilty deliciousness ever since.

I used soy desserts because I'm dairy intolerant but you can substitute, mix and match the frozen cakes and ice creams and toppings however you like. If you want some shortcuts you can also buy mud cake or whatever flavour you like premade, and buy ice-cream flavours that are already satisfactory to your desire for extravagance (already containing nuts or marshmallows or sauce or whatever you like.)

The Behemoth

1 tub Weiss Mango Sorbet
1 Packet Pascal Berry Swirl Marshmallows
1 packet Oreo cookies
1 Tub So Good Vanilla Ice-cream
1 tub So Good Chocolate Ice-cream
4 Bananas, mashed to a paste
1/2 cup Cocoa
1 Bottle Ice Magic (Hard setting chocolate)
1 Bottle Strawberry Ice-cream Topping.
Moist Banana cake ingredients (see recipe below)
Fudgy Brownies ingredients (See recipe below)
Chocolate or Coloured sprinkles
Thick Custard for serving

1.) Make banana cake recipe in a small, round, cake tin. (Follow recipe below). Keep an eye on texture; undercook rather than overcook. Even if some mixture is practically raw, it will be nice frozen. :) Partially freeze on a flat surface (I used round cork surface protectors) and then cut through the middle twice to make 3 even rounds. Return to freezer.

2.) Repeat this process using brownie recipe, only divide raw mixture in half and do two rounds, then divide each cooked round in half to make four cooked rounds all together.

3.) Separate Oreo cookies from filling Using a butter knife; scrape icing from cookies and make two separate piles. Crumble icing (separately) and crush cookies so that there are fine crumbs and some bigger lumps.

4.) Cut marshmallows up into teeny pieces; lay out on baking paper so that pieces do not stick together. Helps to use wet scissors and wet fingers.

5.) Allow Sorbet and Ice creams to stand at room temperature for a few minutes until you are able to scoop them into separate bowls and mash up a little. Add some cocoa to Chocolate Ice-cream to darken and richen a little further. Combine Mango sorbet with Oreo Filling (icing), Vanilla ice-cream with crushed Oreo cookies, and chocolate ice-cream with marshmallows; add a few at a time and smoosh into ice-cream with the back of a spoon so that marshmallows do not stick together in clumps. This task is easier if your fingers are wet.

6.) Prepare an appropriate sized serving plate that will hold Behemoth in the freezer for as long as you want to keep it. Assemble components as a tower as follows;

Top serving plate with a brownie round; spread with mashed bananas. Dot with strawberry topping and drizzle with ice magic. Do not go all the way to the edges as topping will ooze outwards when you add the next layer.

Top with a banana cake round. Spread carefully with half of the whipped Vanilla Ice-cream Mixture.

Top with a Brownie Round. Top with Half the Mango Sorbet Mixture. Dot with Strawberry Topping.

Top with a Banana Cake Round. Drizzle cake with Ice Magic, spread with Chocolate Ice-cream Mixture; Drizzle some more ice magic over Ice-cream.

Top with a Brownie Round. Spread with remaining Vanilla Ice-cream Mixture. Pour a good amount of Strawberry Topping into the centre in a way so that it will spread just to edges when topped with the next round.

Top with Banana Cake Round. Dot cake with Ice Magic. Spread with remaining Chocolate ice-cream mixture.

Top with remaining Brownie Round. Drizzle lightly with strawberry sauce and spread with remaining Mango Sorbet mixture.

Drizzle remaining Ice magic over Behemoth, focusing on drizzle outside edges. Cover top of Behemoth with Chocolate or Coloured sprinkles.

Freeze until required.

Serve thin slice of Behemoth with a Large Blob of Thick hot custard.

Brownies

Ingredients:

Servings: 12-15 Units: US | Metric

1 1/3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt 1 cup butter
1 cup cocoa
2 cups sugar
4 eggs
1 1/2 teaspoons vanilla
1 cup nuts (optional)

Directions:

1.) Stir together flour, baking powder and salt in a small bowl.

2.) Melt butter in a large saucepan. Remove from heat. Stir in cocoa. Blend in sugar, eggs and vanilla. Blend in dry ingredients and nuts if using. Pour batter into a greased 9x13in pan.

3.) Bake for 30-35 minutes at 350°F Cool.


Banana cake

Ingredients

Serves: 4

125g butter
1 cup (200g) white sugar
2 eggs
3 ripe bananas
1 teaspoon vanilla essence
2 tablespoons milk
1/2 teaspoon bicarb soda
1 1/2 cups (185g) self-raising flour

Preparation method
Prep: 10 minutes | Cook: 45 minutes | Extra time: 5 minutes

1.) Preheat oven to 190 degrees C. Cream butter and sugar in a bowl until it turns a light colour. Gradually add beaten eggs one at a time. Mash banana on a plate with vanilla essence. Mix bicarb soda in a cup with the milk.

2.)Add your mashed banana mixture into the creamed butter and sugar and mix until combined. Alternately add your flour and your milk mix until just combined.

3.)Pour mixture into a greased and lined loaf tin and bake for 45 minutes or until cake springs back from a touch in the middle. Cool on cake rack.
