This make a killer breakfast or midday snack! I take it as party favors, or just randomly drop it by neighbor's houses - never once gotten negative feedback on it. Hope y'all enjoy!


3 Eggs Beaten
2 C Sugar
1 C Coconut or Vegetable Oil
2 C Grated Zucchini
3 C Flour
2 TSP Vanilla
1/4 TSP Baking Powder
2 TSP cinnamon
1 TSP Salt
1 TSP Chopped Pecans

Beat Eggs. Add sugar & oil. Mix in Zucchini. Mix all dry ingredients in separate bowl. Add to Zucchini mixture. Add nuts & Vanilla. Bake @ 325 1+ hr.
