I've picked up tiny 3qt(L) slow cooker and my mom has passed on her big old 5qt(L) slow cooker when she found out I was interested and since hers was just lying around.

Thus I've been poking around trying to find delish, quick and healthy recipes that dont call for beans...
I've found in my search that most recipes call for a cream soup of some sort or ALL THE BEANS!!!
Its like two polar opposite ends, either fatty, cheesy and or creamy, or beans, lentils and covered in tomato sauce.

If you've got a winner of a recipe please pass it on, I cant wait to try it out!!

I have a recipe for a steak pot roast, slow cooker! You can adjust all the amounts to what you like, and take out what you like. I cook with red wine, white wine, and beer. If you never have, it's worth a try because it's AMAZING! So here goes:

Steak pot roast (Defrosted)
1 can cream of celery, or mushroom (I know that it's kind of fatty but you can get the %99 low fat ones!)
1 stick of celery, chopped
1 onion, chopped
1/2 can of peas
1/2 can of corn
1 cup of beer
1 cup of red wine
1 tsp cayenne powder
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder

2 tbsp's cornstarch

Mix all the ingredients together in the slow cooker, cover and cook on low for 8 hours, or high for 7 hours. At around 6.5, or 7.5, take the roast out of the slow cooker, put some of the "gravy" into a cup with a lid, add about 2 tbsp's of cornstarch and shake like crazy. Throw it back into the slow cooker and mix, put the roast back in and put the lid on for 30 minutes.

Serve with mashed potatoes!

It's actually easier than I expected to make your own cream of (fill in the blank) soup, though it won't be condensed...
the other day I put some chicken stock in a pot, added spices and cream and voilà! Cream of chicken soup!
I think you could put mushrooms in the blender or food processor, add them to chicken stock (with spices, as you like it) and some mushroom slices, too.

I like this slow cooker recipe:

chicken breasts (bone in, skin on, unless you prefer to remove the skin)
(you can, of course, use thighs and drumsticks, too)

chicken stock
juice drained from a can of pineapple chunks (about a cup of each)
good organic grainy mustard-- maybe a tablespoon?
dashes of worcestershire and tabasco sauces
brown sugar--a couple of tablespoons

green pepper slices and pineapple chunks

spray the slow cooker with olive oil
add the chicken
mix the liquids
pour over the chicken
place pepper and pineapple on top
cook on high for 4-5 hrs or low for 7-8 hrs (it's kinda dependent on how much chicken you have in there...)

Sorry to be less than specific about amounts, but that's the beauty of cooking as opposed to baking, which is all about chemistry, and demands precise ingredients. :)
Then, too, you can tailor a recipe to your own liking...making changes as you see fit without destroying things. :)
Oh--if you like you can dissolve a T. of cornstarch in a T. COLD water and add it for the final hour to thicken up the sauce.
It's delish with rice and broccoli.

I've got a million slow cooker recipes, and none of them use canned soup OR legumes...lol
I don't love the former, and my kiddos despise the latter. ;)
Don't get me wrong, we eat Oreos and potato chips, but if my intention is to cook a healthy meal, that's what I want to do. lol

Oh, and as to cooking time, it's also dependent on the wattage (or do I mean voltage?) of your slow cooker.
If you check recipes that come with it, or perhaps the website of the manufacturer, you can get a better picture of what that should look like.

here's on for you.

Beef and Vegetable broth soup. I used a cooked joint of Beef.

1 cooked beef joint. Pull apart into chunks, then add 1 can of chopped toms, cauliflower, green beans, peppers, 1 stock cube - veg or beef - dissolved in a jug of boiling water, cook until beef is falling apart and veg is cooked, allow to cool and then blitz with a hand blender or food processor, then 1-2 tbsp of gravy granules at the end to give it a little more colour and make it look appetising.

It will look not appetising but it does taste good. If you want to freeze it, don't put the gravy granules in, when you want some broth heat up what you have made and then add the granules.

Italian Pasta Soup

2lb ground beef browned and drained
½ large onion chopped
3 carrots chopped
3 celery stalks sliced
1 ½ cups frozen corn
2 cans ( 14.5oz) Italian diced Tomatoes
2 cans white beans
4 cups beef broth
1 jar spaghetti sauce
½ teaspoon oregano
2 teaspoons tobacco sauce
½ teaspoon salt
¼ teaspoon pepper
1 cup dry pasta ( cook separately and add at the end)

Instructions

Use a 6 Qt. crockpot mix all ingredients together (except the pasta) cover and cook on low for 7 to 8 hours. Then add cooked pasta at the end

Hoping to revive this thread so digging out of moth balls.....love crockpot recipes. Anyone have a great recipe they don't mind sharing?

Prep Time: 4 hours
Servings: 2

Ingredients:
2 chicken breast fillets
1 tbsp olive oil
3 tbsp sunbutter Salt and pepper 1 lemon, juiced

Directions:
Rub chicken with salt and pepper. Place in crockpot and drizzle with olive oil and sunbutter.
Cook on low for 3 to 4 hours. Spoon sauce into a bowl and whisk with lemon. Drizzle sauce over chicken.

swiss steaks are easy :)

brown meat with onion and garlic powder and celery salt.

slice onion if you wish and lay in bottom of crock pot, top with browned meat.
almost cover with beef broth or water and broth.
add a few bay leaves.
cook on low about 6-7 hours.
make some mashed potatoes and a salad or your favorite veg.

save the leftover broth. you can freeze it and add it to soup or stew. :)

Italian sausages, sliced onions, and bell peppers and jar of your favorite spaghetti sauce, cook on low or high depending on how soon you need it, slice up sausages and pour over noodles!! So yummy

They sell that sausage mixture on an Italian roll at the Jersey Shore. It's a big hit, too! (It's usually hot/spicy sausage)

GREEN CHILI STEW

6qt crockpot

2 boxes beef broth
2 lb. stew meat browned
1 large onion, chopped
2 cans fire grilled tomatoes
4 cans chopped mild green chilies ( 4oz each
1 16oz jar green salsa
12oz frozen corn
Salt & pepper to taste
about 2 cups cooked rice or to your desire

Put everything in crockpot but rice and cook on low for 5 hours.
cook rice
Divide chili into 2 bowls put one bowl in freezer for a later meal
Put rice into other bowl for lunch or dinner.
This is nice with some home made bread

This is a chicken stew, definitely not chicken soup!

Strictly from memories of my "I'm going to be a good wife if it kills me" days when I was first married.

Back then we only had the medium-size crock pot. (Since then, we've had a mongo-sized one for pot luck dinners for church, and we have a cute one but it only makes one meal for two people, and 50/50 on whether it will boil over the sides.) Also, there's just two of us, so we try to make one eat-tonight meal and one leftover meal. I don't remember if this gave extras for lunch at all.

Half a cup of
dried egg noodles or pasta. (Put in first. That's really the thickening agent to make it a stew. If you don't add any more pasta at the end, there is no pasta when this is done. It completely dissolves.)

Six skinless chicken thighs. (Now they have boneless-skinless, which gives more room.)
Cut up to "stew-size."

Also cut up to stew-size the following:
3 stalks of celery
3 medium size carrots
1 large onion
Optional:
1 bell pepper
1-2 tomatoes.
mushrooms -- however much you like AND fits.
potatoes, but this includes pasta for a starch.

Add 2-3 large cloves of garlic, making sure that goes to the bottom of the pot, (so it cooks well.) Add 1-2 more cloves if you really like garlic in your food.

Throw it all in the crock pot as you're done slicing and/or dicing.

Add Mrs. Dash seasons to taste. (Back in the olden days, they had no Mrs. Dash, so I made it up depending on what dried herbs we had in the cupboard.) If you've got no Mrs. Dash, add whatever flavors you like. Chicken is bland on its own, so don't go stingey.

Add one cup of water.

Set it to automatic, so it heats as needed, but doesn't cook too hard through the day. If you're home, stir once every other hour. If you work, make sure you get the top ones to the bottom the second you get home, or they'll be very dry.

1-2 hours before eating it, add another half cup to a cup of water, depending on how much stew broth you have by then. (If you see none, add a cup. If the stew broth is way at the bottom and barely visible, add half a cup. The pasta/thicken agent uses up the juice and really condenses the flavor, so you'll want to get another broth going with whatever is left.) Stir thoroughly.

1 hour before eating, add enough egg noodles or pasta to make you happy. (Read directions on package, if you aren't knowledgeable about serving portions.) That will be the noodles in your stew. Stir every 15 minutes to make sure the noodles get the moisture and actually cook.
