Especially for food-allergic people, since it's loaded with protein and doesn't have eggs, dairy, etc in it.

Put 2 cups of cooked or canned chickpeas (garbanzos) in a blender and cover them with water.

Add 1/4 cup of lemon juice,
1/2 tsp of salt,
and 3 peeled cloves of garlic.

Blend until smooth. You may need to add more water to get it circulating properly.

Now pour 3 tablespoons of olive oil through the top while it's blending.

That's it! Hummus is really good as a dip with corn chips or baby carrots, as a sandwich spread instead of mayonnaise, or even added to a burrito! :D

Nice post!! A variation on the theme is to make chickpea 'tuna' by adding a little kelp powder and perhaps some diced celery and onion, a pinch of turmeric or cumin adds a bit of pinkish-orange color to fool most carnivores ... chop the chickpeas a bit more coarsely than for hummus ...
