Daughter #2 is with me tonight, and she is a vegetarian, so I made some veggie enchiladas. They turned out great but I didn't write down what I did.

Before you read this, please note my age and you young whipper snappers, don't look.

I need to eat kale. Kale is terrible. Auful. Cook it all day and it is still tough. I actually used it in a salad. Sliced it very thin, soaked it in lemon juice to soften, added steamed salmon, a bit of lettuce, some walnuts I toasted a bit, and sprinkled it with dried cranberries. I used garlic to flavor it, and dressed it with some Olive Oil whipped in lemon juice.

For lunch a slipped an unpeeled tangerine in the vitamix, the whole thing, along with strips of the awful kale. I put it on high and let it rip and rip with some water. I stirred in Greek yogurt and it was supper.

I totally agree. Kale is horrid. :p

Tonight was a fish fry. Alaskan pollack dipped in an egg and dill dressing (with live cultures - bought at a farmer's market, used as a last-minute whim), then in seasoned flour (S & P, garlic, paprika, dry mustard, dill again), steamed organic green beans which I cooked too long, pasta with a lil' olive oil and butter and garlic.

It was delicious! ...except for the mushy green beans. The kids ate everything, so that's always a win. :)

my husband made lasagna last night for tea, we had friends round, it was amazing, there was mince and bacon. and the tomato sauce i dont know what he put in it. i made a salad to go with it, we had galic bread and a bowl of olives and feta cheese which i think is gross, olives = ew.

due to working midnights i eat meals completely out of order. when i actually eat a real meal that is. i started today with a turkey and swiss sandwich lettuce and tomato of course followed by the urge to have indigestion by reading this thread. lol

For breakfast I had a bean-based dish called moin-moin with some cereal very similar to grits. The beans which has the outer skin taken off is blended to a smooth paste, seasoned with bits of meats & spices and steamed in some kind of large leaves. They're absolutely delicious.

I can't wait to have it again at home but I thought it was a bit brief to call a recipe in its own thread but maybe would be welcome here.

He took two halves of those flat white bread rolls you get in Coles and toasted them in one of those press thingys. Then he spread it with butter, cut up the avocado into wedges and lay them out. Then he ground a little salt and pepper over the top, and a tiny bit of dried dill. Finished with a squeeze of fresh lemon juice.

Oh my.

Ohhh my.

I'm speechless.

I got a bunch of carrots at a farmer's market the other day. I don't like carrots (they are too sweet for me), but got them for my new friend, a retired police horse named Sunny, who is now part of an equestrian program for the developmentally disabled. My work didn't take me to his ranch this week as expected, so now I am stuck with all these carrots. I have them in the pan, along with leeks, which I have never cooked with. Added chicken thighs and will make a sauce by adding a little bit of cream to the juices. oh....and tarragon. I don't feel like making a salad, so I'm having it with a red saurkraut with all the live cultures still active.

I just made eggplant parmesan. It's in the oven and about to be dived upon with knife and fork. ..and it has triple garlic in it or more.

I could have posted this under prayer requests, but I thought sticking it here would be a cool way to interject God into something light-hearted. Please pray for my health and my weight. I'm really having trouble being sensible with my food. The other day I ate a litre of icecream in one sitting (honey and macadamia, and ice magic- a whole bottle) and another day recently I sat down and ate a whole vienna log by myself. Some days I'm too depressed to eat anything and I get weak and dehydrated, and some days I stuff my emotions with food. I've even started stashing more than half of what I bake in my room because I know I want to eat a lot of it myself, instead of leaving more of it on the bench for all of my housemates to share. Even as I write this I know I'm going home today to make oarange rind and dark chocolate cookies. (See, I'm justifying presence in this thread by naming all the food involved). I've been working on macaroons but I can't get them right. I'm getting tubby again and I don't handle it well. It really hits me hard and impacts my life quite seriously when I gain weight.

And to technically answer the question, I put chocolate in my fruit thismorning that went on my french toast, and I just ate two manderins for lunch outside the library, which was a bit boring but a relief for my blood sugar level.

I too am trying to lose weight. I lost about 20 pounds recently, then have only been maintaining for the last few weeks. I am still eating generally healthy, but have been sneaking in way too many baked goods. I also need to exercise more. For me, my downfall is just in being disorganized and not planning meals rather than emotional eating, which I used to do.

Later on today, I may just start a healthy eating support thread or somesuch.

Yes, it was as good....as far as carrots go. To me, they really belong in a cake.

I've got my kids this weekend. They will be more than happy to eat the remainder for me. :)

Lately I've been eating just a bowl of oatmeal a day. Don't know why I haven't been hungry, and when I am oatmeal sounds good. Though reading all of these makes me hungry, especially Eggplant Parmesan.

You guys are crazy Kale is delicious. Especially when put it through your juicer and make fresh kale, apple, celery, carrot, spinach and orange juice in the morning. Thats like a super breakfast in a cup. Although my body eats right through it and im hungry again in a few hours :(
