Chocolate Pineapple Cream Cheese strawberry banana Upside Down Cake.
¼ cup butter melted
½ cup packed brown sugar (can sub. one half of the sugar or 1/4 of a cup with truvia, stevia)
1 can 20 ounces pineapple slices drained
8-10 Maraschino Cherries
1 package 9 ounce chocolate cake mix
2 packages of 8 ounce cream cheese softened
2 eggs
¼ cup chopped strawberries
1/2 banana pureed with a fork
Preheat oven to 350 degrees. Spray 9 inch spring form pan with nonstick cooking spray. Stir together butter, sugar in the pan. Place slices of pineapple in 9 a inch spring form pan then put cherries in center of each pineapple slice, cut any remaining sliced into decorative design.
Prepare cake mix according to package directions. Pour ½ of the cake batter mix into the pan evenly over the pineapples. Beat the cream cheese strawberries and banana and eggs into a bowl whip with a mixer until smooth. Spread cream cheese mixture over the cake mixture gently. Pour remainder of the cake mix over the cream cheese mixture in your pan. Bake 65-80 minutes or until your toothpick test is clean. Take out and let cool for 5 minutes. Makes 16 servings.
