A simple but hearty lentil salad

Hi all,
This lentil salad is great if you are on a budget, want protein and don't want to cook everyday - (you can store this in your fridge fro up to a week.)

Ingredients:
2 medium onions chopped
1 bag of green lentils
1 tomato chopped (optional)
1/2 a cup of viniagrette

Viniagrette
1/4 cup olive oil (preferably extra virgin, cold pressed - if not any veggie oil will do )
1/4 cup vinigar (Balsamic if you have it - otherwise any vinigar will do the job)
a touch of tobasco sauce
ground black pepper
mixed italian herbs/oregano

Mix conents in mug - stir vigorously with fork.



Boil lentils till they are cooked (this usually takes about 30-40 minutes on a high temperature).
Let them cook down or rinse them in sink using a collander.Add the onions and tomato.Add the viniagrette.Mix well and serve cold.
