I finally figured out how to make a beautiful gravy that doesn't have any grains, corn starch, dairy, or msg (as required by the Paleo diet which doesn't allow grains, dairy, msg, legumes, sugar, dried fruits, or salted butter).
1 lb sausage
1 whole yellow onion
roughly 3/4 c. almond meal
desired amount of almond milk
salt, pepper, and caraway to taste

brown the onion and sausage in a pan that has no non-stick coating (I use cast iron). Add 3 Tbsp unsalted butter if needed and brown in the almond meal. When browned gradually add the almond milk until desired proportion. Add seasonings and simmer until darkened a bit and somewhat thickened.

OK - tried the biscuits. The recipe is a keeper! I didn't use honey or agave nectar - - I'm low-carbing it, but it was sweet enough without it. I used butter though. Next time I think I'll use coconut oil instead.

I'll make that gravy to go over some veggie dish one of these days. Thanks for sharing!

Even though I'm not paleo, I'm gluten/wheat/dairy sensitive. Well, honestly, minus butter, I'm just full-out allergic to milk. Though for some dumb reason butter doesn't bug me. But if I can substitute the almond meal and milk for something else (my dad's allergic to almonds), this might work as a meal we can do. And if the sausage is turkey sausage. I try not to have too much pork since it can make me feel like there's knives going into my stomach at times. (I know...CRAZY allergy/food issues. It can be hard to keep up with.)

wow thank you so much for posting this! S.O.S was my favorite as a kid (buscuits and gravy mmm) and I am following the Paleo lifestyle and have had to forgo some of my favorite guilty pleasures. I will definetely be making this soon without the almond milk (regular silk is one thing i can't give up hah).
