So a couple years ago, I stumbled across a recipe for a dessert.

Words can not even begin to explain how delicious it is. I've looked EVERYWHERE on the internet for this recipe. I can't find it at ALL. No where.

Well I have this recipe, I love it. And I love all of you. So I've decided to post it.

So here it is. :)


Rainbow Cake


8 oz. Almond filling (I found this in Martin's in the baking isle)
1 cup butter (softened)
1 cup white sugar
4 eggs
2 cups all-purpose flour
1/4 cup seedless raspberry jam

1/4 cup apricot jam
1 cup milk chocolate (melted)

Preheat oven to 350 degrees Fahrenheit
line 9x13 pan with parchment paper (wax paper)

In a large bowl, cream together almond filling, butter, sugar, and eggs. When mixed, use electric mixer until batter is fluffy and smooth. Fold in flour 1/4 cup at a time to form dough.

Divide dough into three equal portions. Color portions as desired. (I use yellow, green, and purple)

Spread 1 portion into prepared pan. Spread evenly about 1/2 inch thick. Dough will NOT reach to sides of the pan. - repeat 2x

Bake 10-12 minutes. Cool on wire rack.

Take your first layer and spread with raspberry jam, place second layer and spread with apricot jam, cover with third layer and cover with melted chocolate. Keep stored in refrigerator.

I never did find it online.
