Kiiiinda looks gross....but SOOOO GOOOOOD

1 Can Black Beans (I use "no salt added" ones so I can control the amount of sodium better)
1/2 Cup Quinoa
1 tsp Curry Powder
1 tsp Cinnamon
1 tsp Chilli Powder
1/2 tsp Sea Salt
1 Cup water
Chopped Green Onion
1/4 cup Chopped Tomato


Cook the Quinoa Separately (ratio of water to Quinoa is 2:1)

Rinse Beans

Bring to a boil in the Cup of water with the spices. Cook for 10 minutes, reduce heat and simmer for 10 minutes.

Add the Quinoa in to the beans and mix it up

Top it with green onion and chopped tomato


This is supposed to make 2 servings, but half of what it makes is too much for me so I made it three.
1/3 of the batch is 259 Cal / 48g Carbs / 3g fat / 279 mg sodium / 2g sugar based on the brands I used.

Thank you Meggars. I've been wanting to try quinoa but the hubby is a bit reluctant. He loves chili so this is recipe is perfect. :)

Quinoa should not be considered healthy because it's really delicious. :)

Great recipe Meggars, can't wait to try it!

it isn't really too chilli like, neweagle....but if that's what it takes to sell it....have at 'er! lol
