Gluten-Free Peanut Butter Cookies
Ingredients-
-1 cup of peanut butter
-1 cup of sugar
-1 egg
-1 tsp of vanilla extract
- 1 tsp of cinnamon (optional)

1. Preheat oven to 350 degrees
2. In a large bowl combine peanut butter, egg and vanilla extract, mix well. Then add sugar and cinnamon (if would like a cinnamon flavor). If dough is too sticky at a little more sugar.
3. Take Tbs amount of dough, roll into ball then place onto cookie sheet. (Repeat for each cookie).
4. After dough balls are all placed on cookie sheet, flatten dough with fork.
5. Place into oven, back for 9-10 mins for softer cookies, 10-12 for crunchy cookies.

*Should make about 12-18 cookies.

Sounds good. A lot of people are into gluten-free these days, aren't they?

Thanks! Yeah, I have gluten-intolerance so I have to eat gluten free foods. But there are lots of different dishes to make that are gluten free :).

Oh, so you are, too? we keep gluten free foods in the house in case of visitors with such a need; some of our friends are this way, too.
