Ron’s Roasted Turkey Breast.
Use a roasting pan with cover, or a shallow baking pan with an aluminum foil tent.
The recipe is very simple. It brings out the true flavor of the turkey and the resulting breast is very moist.
Pre-heat oven to 450°
Rinse breast and pat dry with paper towels. Salt the underside of the breast.
Place breast in roasting pan and spray breast with cooking spray (like Pam). Use just enough to coat the skin, don't saturate it.
Season breast with garlic powder and freshly ground black pepper.
Add just enough water to cover the bottom of the pan - remember we're not making soup here, we're roasting.
Cover, place in oven and immediately reduce heat to 350°
Remove cover after 2 hours and continue to cook until browned and done. Baste every 15 minutes only when roasting uncovered.
Timing varies with the size of the breast. an 8 lb. breast will take about 2½ to 3 hours.
Use the accumulated juices in the pan for gravy.
