This is simple to make and a big hit with my family. I am not going to put down exact measurements because I don't cook that way plus you can scale it to fit your needs.

Mexican Goulash

Noodles get the water boiling before you start on the meat.
Ground beef
Chorizo sausage(just enough to flavor the meat)
Add extra jalapenos here if you like it hot.
Cook above till meat is done and drain grease.
Add chunky salsa ( for a pound of beef use 2-3cups at least)
Add Velveeta cheese (melt cheese in with the meat)
Add sour cream (do this at the end b/c it will scorch)

Add meat mixture to the cooked noodles of your choice
Stir and enjoy.

I'm a big fan of Goulashes....
I'm always making one pan wonders...
Gonna try it!!! I've been using yogurt lately in my dishes... and yes at the end or it curdles...

hmm I have never thought about using yogurt. I will have to try it. Let me know how you like the recipe. :) I adapted it from a hot meat dip I make for nachos.

LOL, yes that was what I was thinking!!! It reminded me of a dip I had once at a party!!! Yum, I'll let ya know!!!

Never bought Velveeta before... you could take your recipe and make a casserole, and put crushed tortilla chips or nacho chips on top and extra grated cheese....

This is fun, I like taking recipes and making it a goulash, it goes farther and I love left overs, it seems to get better the next day!

I'll have to buy some elbow noodles and the cheese.... or I might use rice...

Oh it might work well with rice! And I like your idea of crushing chips on top. Instead of Velveeta you could make a cheese sauce with cheddar cheese, milk, and thicken it how you like. I use Velveeta because my family loves fake cheese. lol

I've had the fake cheese, just never thought of buying it, I used to love it at 7-Eleven!!!
