Saying hello to my brothers and sisters in the Lord at Calvary Temple, Hyderabad, Andhra Pradish. My wife and I love pastor P. Satish Kumar. When his congregation was about 25 members there my wife and I hosted him in our home in Arkansas in the U.S., while he was here building up that ministry on various trips. We have a guest bedroom, but he preferred to sleep on the carpeted floor, which amazed us. His food needs were life-changing for us, so we learned your ways, India. I still experiment with his diet and herb choices. We were very blessed to have such a personal relationship with that man of God. He called us "Mom and Dad". I arranged for him to preach in a Wednesday night service in our church once. His English was very challenging, but the congregation fell in love with him. That night was the largest love offering in our church history. Satish introduced us to quite a lot of the culture and religious challenges in India, helping us to deeply appreciate that nation, the people, the churches sometimes subject to hostility, and get behind support of the gospel there. We are forever thankful to be a part of the work of the Church there. God bless India through those there that are embracing Jesus, Son of God, Lord of lords, King of kings.

Oh, yes. Our Hindustani friend brought his own spices, and taught us about chicken on the bone which makes it's own broth. No need for canned chicken broth. We learned not to cook rice till swollen and sticky, the American way that is so.... bad by comparison. So we started over learning the right way. Birayani scents filled the air and neighbors called. "WHAT are you cooking?" The dish is delicious, and healthy. Make enough for all who follow that scent of India. Go easy on those spices. The video suggests more than most of us Americans can adapt to.

I found most of the spices locally in a health food store, and ordered the rarer ones off the internet. The clerks asked me "What do you do with those?". We do what Indians do with it. We make chicken and fish taste wonderfully different in one-dish meals, and it is all wonderfully heart healthy. We make it once a month for a special treat. We don't use Walmart chickens for it, but in honor of Satish's earnest insistence, I go to the meat market for a fresh chicken that is still bleeding. It is hung up to bleed, then cut up. Only a dozen customers ask for that, so they provide it. Ah, America. There is a huge difference in taste, worth the effort. The same is true for fish. It needs to be alive when preparing. So I fishhave fun, and bring home some catch.

15th August is India's Independence Day and I see this as a run up to celebrating our birth and growth in the modern world.
