Should we trust people when the bible says "Cursed is the one who trusts in man"?

I would say we can trust people, but not in the same way that we are to trust God. The trust we have in God is in his promise of salvation, which no man can offer. We can trust that God will always be faithful, that he is always true, that he loves us, has a plan for us, and that he always wants what is best for us. Men are not always faithful, not always true, often don't love others as themselves, make plans for themselves, and want what is best for themselves. We place are trust and hope in the Lord that we may have salvation, and for this we can not expect much from other human beings. I think Athanasius said it well: "[Man] can not put straight in others what is warped in [himself]," so we do not trust men to offer to us that which only God can give us.

You can trust that your best friend won't steal your favorite shirt (if he/she is of good character), or that your mom or dad will show up at your school play. That's ok and reasonable.
