I have just the thing for you, and it's super simple! We do it with both peaches and apples. Just make up your favorite pie filling recipe and put it in a gallon freezer bag. Then freeze it in the pie plate and when it is totally frozen you can take the bag out of the pie plate and...presto! You have a pie filling all ready to slide into a crust. When you want to make the pie, just make up a crust and take the pie out of the bag and put it in the crust. There is no need to thaw it because you froze it in the pie shape, right? You might need to bake it for a few extra minutes but that's the only difference.

This is literally the best thing ever, and we use it all the time. It is easier than opening up a can of store bought pie filling!

I have two Apples trees and one Peach tree
The Three best things my ex could of left for me
other than my three beautiful Children
I think I'll make Peach and Apple Pie
Does anybody have any other suggestions for me?
Is there anything else I can make with these wonderful fruits?
I got lots on each tree and don't want to let these fruits go to waist
would I be able to slice and freeze them?

First, you'd probably get more recipes and ideas from the recipe forum on this site, but... off the top of my head:
1. peach ice cream.
2. Apple coffee cake.
3. Muffins or sweet bread made with either apples or peaches.
4. Do you have a brownie recipe? Well, then make the same recipe, but with a little less of the wet ingredient, then cut the peaches into roughly one-inch pieces and layer the brownie recipe with that.
5. Peach or apple compote.
6. Waldorf salad for the apples.
7. peach cobbler. (Sorry. I'm more of a peach person this time of year. Wait until winter, if you want me to go all apple recipes on you. lol)
8. Peach soup. (Oh, and if you happen to have some basil, add some for a zowie-effect on your tongue.)

Apples don't need freezing, since they last for about 9 months. Peaches do freeze, but you have to cut them into pieces first, and make sure they don't touch one another while freezing, because then you get clumping.

I'll give you a head start with the sweet bread and muffin recipe, since it's the same recipe, just a matter of what you're going to bake them in. Warning though. This makes about 18-20 muffins or two loaves of bread.

Basic Recipe

3 C Whole Wheat Flour
2 t baking powder
1 t baking soda
1 C Splenda
½ C raisins (optional)
½ C chopped nuts (optional)
2 T oil
2 eggs
(Add fruit from the bottom section of this recipe.)

Preheat oven to 375 degrees. Lightly grease standard-size muffin tin. Makes 18ish.
In large bowl, stir dry ingredients together, until nuts and raisins are spread throughout. Add wet ingredients and stir until combined. (All fruit, except apples and peaches are "wet ingredients.")
If making muffins, divide ingredients into the 18 muffin cups. They don't puff up much, but they do puff up some.
Bake for 23 minutes, or until toothpick inserted deeply into the middle cup comes back clean. (If the muffins mound high in the muffin tins, it will take 25-27 minutes. If they're "just right," they'll take 20-23 minutes. The difference is in the amount of extra ingredients used.)
Let cool before serving. Refrigerate, if you don't eat them all in one night.

If making sweet bread, grease two loaf pans, and divide evenly. Then bake for about 50 minutes to an hour. (Same toothpick trick, except in the middle of the loaf.)

Variations According to Fruit Choices
Banana nut
3-4 smashed bananas
1.5 C fat-free milk (We use lactose free milk.)

Pumpkin
13 ounces of pure pumpkin puree or roasted pumpkin (Recipes for roasting squash can be found online)
1/2 C milk
1 T pumpkin spice (cinnamon works, if you don't have pumpkin spice around)
1 T vanilla
Option - in lieu of raisins, or along with raisins, add a small bag of cranberries with a quarter cup more Splenda.

Apple Raisin
3 medium apples (Add 1 T of Real Lemon to apples and stir to retard browning)
1-2 T cinnamon, to taste
1.5 C fat-free milk
Option - if you like Jewish Apple Cake, consider adding 1/2 C of sugar-free orange marmalade or 1 T of orange flavoring.

Peach
4 medium size peaches
1-2 T cinnamon, to taste
1 C fat-free milk

You're welcome :) Apple crisp is one of my favourite desserts. I've also had rhubarb-apple crisp. It was really good! I also love that it's easy to make
