Why can't we toggle subscription, like to delete multiple subs?

Top right is 'Settings'. From there, on the left you'll see 'General Settings'. Scroll down a little and you'll see 'Default Thread Subscription Mode'. From there you can make the adjustments you're asking about.
And if you want to subscribe/unsubscribe to a specific thread, at the top, just above the first post you'll see 'Thread Tools'. Click that and if gives you a subscription option.
