Ingredients

pork butt (shoulder)
1 lime
sour orange juice - about 3 tablespoons (bottled or squeeze half a sour orange)
minced garlic
bay leaves
cumin
salt
adobo all purpose seasoning, without pepper (blue cap)

corn tortillas
watercress (i suppose you could use cilantro but i LOVE watercress)
cotija cheese
avocado

Instructions

Cut up the pork into a bunch of small pieces, and place all the pieces in a mixing bowl. cut your lime in half and squeeze one half over the meat. add the sour orange juice, mixed garlic, cumin, salt, and adobo and mix everything until the meat is well coated. (this step is nice to do the night before so that everything marinates well)

in a pot, add a few tablespons of oil and brown the meat from your mixing bowl for 5-10 minutes.

pour your browned meat into a baking pan and add some bay leaves and chopped onion.

cover with aluminum foil and bake in the oven at 300 degrees for 4 hours.

after 4 hours, uncover, take the bay leaves out, and set your oven to broil for 30 minutes. take your meat out, 'shred' with a fork and broil for about another 10 minutes so that your meat is a little crispy.

plate your carnitas by warming up your corn tortillas, and after adding your pork to your tortilla, garnish with fresh cotija cheese, chopped avocado, chopped onion, watercress, and slices from the other half of your lime.

Next time I think ill add raw shredded red cabbage on top....I completely forgot to buy some this week.
