I'm looking for ideas for a Resurrection Sunday brunch. It will be small (only 3 of us), but we will all be at church all morning, and my guest needs to catch a train in the afternoon, so it has to be quick -- something I can prepare the night before and pop in the oven when we get home from church.

I don't usually make brunch, but thought it would be a good idea since, clearly, I will not have the time for a full-blown special dinner.
