OK folks,

I thought about posting this in "heavenly recipes," but this forum gets more traffic. Although if the mods want to move it there and change the name with their magic mod powers, I'm ok with that...

The rules:

1. Make an entree, side dish, appetizer, dessert, or beverage with the week's featured ingredient.

2. Post a pic of the dish

3. Post a recipe (or describe what you did, i.e. a dollop of this, a few sprinkle of that).

4. Nominate a featured ingredient for the next week.

You can use a tried-and-true family recipe, share an experiment, post a kitchen disaster and ask for tips, brag about how everyone raved about your dish at the dinner party, whatever. But just use the featured ingredient as a key ingredient in your dish.

We will start the first week with something basic: POTATOES!!!

Well, I was planning on using potatoes, but only as one of a few key Ingredients. not the star of the show.

It doesn't have to be the star of the show! If you go out and see the featured ingredient in a restaurant dish, go for it! Post away.

Since I only cook for one, I normally pick up something on the way home or whip up something small. But I look forward to see others :)

That was snarkier on screen that it was in my head, I apologize.

Seriously, there are no "bad" cooks. Only inexperienced ones. Hoping we can all share and learn through this thread.

1. Microwave a potato until it's cooked.
2. Add a tablespoon or so of coconut oil.
3. Sprinkle with salt.

Tastes really good; kinda like popcorn. I know, I know; barely even a "recipe", but I just tried it last night, and I made the same thing for lunch today it was so good! And the potatoes weren't even cooked fresh; they were leftover whole baked ones :D.

This is a seriously great idea for a thread but...

I have a sweet potato on my counter that's growing a root.

Maybe I should plant it in a pot and take a picture of that...

(I might have better luck growing a potato than regular houseplants... seeing as I'm losing yet another two as I type this.)

Kim, check the ph of the soil. Also, sun. And water. And room in the pot (some of them like being crowded, some don't). And fertilizer.

Also aliens.

So I checked out your Bible passage reference and saw it's the one that says "God made all kinds of trees and plants grow..." Not in this household. I was actually expecting you to reference the passage about God cursing the soil. :D

I like your explanation better, though--ALIENS.

Obviously, they're using my plant pots... as a litter box. Which you'd think would help them but apparently it kills them on contact.

(CatHerder, so sorry to hijack your thread. If it's any consolation, I WOULD like to try growing a basil plant... you know, to throw in with those potatoes... but I think we can already predict what would happen.)

I cooked three things with potatoes in them today that weren't just mashed potatoes as a side.

1. Mustard Encrusted Chicken- Chicken breast with a dijon mustard glaze and coated with panko bread crmbs and italian herbs over a set of roasted potatoes, green beans, carrots, and tomatoes.

2. Stuffed Chicken- A chicken breast stuffed with feta cheese, roasted broccoli and tomatoes over roast potato wedges and topped with homemade marsala sauce.

3. Pan-Seared Chicken- Pan-seared chicken with a herbed au-jus wine sauce over a vegetable hash cake.

I like to sit there and look at potatoes, and visually enjoy them while they do their thing at room temperature.

Lol, joke, here are some 'sweet' potato warm salads I made awhile back. With nuts and zucchini that was cooked in coconut oil with fresh baby spinach leaves. Really nice, if I may say so myself. The other container is full of things to snack on. This was my work lunch. I eat lots.
