1 tbsp. canola oil
1 lb. ground turkey
1/2 large onion, diced
2 cloves garlic, minced
kosher salt
1 package Jasmine Rice
1 c. marinara
1 1/2 c. shredded cheese, divided
4 bell peppers, tops removed

Preheat oven to 375°. In a large skillet over medium-high heat, heat oil. Cook turkey until starting to brown, 3 to 4 minutes. Add onion and garlic and cook until turkey is golden and cooked through, 4 minutes more. Season with salt.

Meanwhile, cook Jasmine Rice according to package directions.

In a large bowl, combine browned turkey, cooked rice, marinara, and 1 cup shredded pepper jack and season with salt.

Spoon mixture into hollowed peppers and top with remaining 1/2 cup pepper jack. Bake until peppers are tender and mixture warmed through, 28 to 30 minutes

My stepdaughter prefers turkey over hamburger but if I were to try that recipe I would use hamburger. I do eat Jasmine rice though. I might just try this recipe. Every 10 days it is my turn to cook dinner. Today I made marinated chipotle porkchops, seasoned green beans and German potato salad. Came out pretty good.

Love using colored peppers too. Red, orange,yellow.

I don't like the taste of red meat because I once worked at a fast food hamburger restaurant for 4 years and that was pretty much all I ate, lol. After a while my tastebuds couldn't stand the taste of it anymore and it made my stomach churn to think about eating it.

That is understandable. My wife likes turkey too.
