Parmesan and cheese crusted potato wedges

These are super simple, and the recipe is easily adjusted for however many you wish to make.

4-5 medium sized potatoes. I usually use the gold ones. If they're the smaller kind, get 9-10.
1/2 cup Panko bread crumbs
1/4 cup olive oil
2 tbsp garlic powder
1 tbsp ground pepper
1 tbsp salt. (I like the coarse sea salt)
3/4 cup Parmesan cheese. (Usually the stuff that you buy on the shelf at the store, the stuff in the green containers work best. The fresh stuff doesn't coat as well. )
1/2 cup shredded cheese, any kind you like.

Preheat the oven to 425 degrees

Slice the potatoes into wedges of about 1/2 inch thickness.

Combine the bread crumbs, garlic powder, pepper, salt and cheeses together in a separate bowl.

Pour the olive oil over the potato wedges in a large bowl so they are well coated.

Toss the bread crumb mixture into the potatoes and shake around well to make sure everything is fully coated.

Pour everything onto a foil-lined pan and make sure you get all the extra coating stuck at the bottom of the bowl poured over the wedges. You're welcome to sprinkle extra cheese on top of everything.

Stick in the oven for 30-35 minutes.


Feel free to adjust the ingredients as desired.

Oh my I'm in trouble.

The nutritionist at my weekly weight management group will be all over me for this haha.

It does sound delicious. Next time I've decided to look the other way on behaving myself I'll keep this one in mind. ;-)
