Hey college boys! Here is a cheap way to impress your date with something yummy that can be made in a microwave.
1 box of penne pasta (I use whole wheat)
1 pkg of pesto (can usually be found with the taco seasoning/gravy mixes)
a handful or so of raw broccoli
a pinch of feta
a pinch of real grated parmesean
a pinch of mozzerella
some olive or canola oil (canola is cheaper)
*sea salt and fresh ground pepper is optional
Boil pasta (either on the stovetop, or in a large microwave-safe dish)
add the raw broccoli about halfway through
Remove the broccoli at desired consistancy (only a minute if you want it crisp, a couple of minutes for it to be soft, about 5 minutes for it to be mush)
Drain the water from the pasta (it's okay if you don't get all the water out)
Add your package of pesto and stir in 1-2tablespoons of oil (or until it's the consistancy you want)
add your broccoli, feta, and mozzerella and mix it together
Plate your pasta and add your parmesean.
BAM! Ten minutes top and you've got a delicious, impressive dish that can be made in a microwave and served romantically.
